You are just saying the wine make us minute for your barrel that was racked and I know I hear you asked for what happens to the lees that sitting in the bottom of the barrel.
Well, we would like to introduce your “Bruce” which is that brand new barrel washer. We turn the barrel upside down, we drain the lees out of the bottom and we actually take that and put into a separate container and is taken away for recycling which is a lovely way to do it.
Then once we turn the barrel upside down, you rotate it out and we have got these lovely barrels with a clear head. They are not normally like this of course, you have seen your wooden barrels but this gives you a really good overview of what this machine wood really do and so what we do is we grab the Conner, who is our barrel guru and he will get around the other side and we will get this thing rolling for you.
So, the reason that we used this marvelous machine is that, as you can imagine, the inside of the barrel is pretty hard to sterilize, it is pretty hard to keep clean. All the small pores inside, fantastic sites for bacteria and all of the bad bugs that we really do not want, so a machine like this would wash two barrels at once and through the process, it actually cleans around the bunk hole first. And then the head will move further into the barrel and clean the bottom and it actually gets into these crevices, because this is the hard part. Actually right in here on the other side of the glass, this chime is the really hard part to get cleaned. And this head is designed to get right in there and clean the barrel totally.
These are relatively--and because we have got the nice new demonstration ahead on them. They are actually a fairly clean barrel, but when you actually using it with barrels that just being wrecked and the lees get washed out. You can see the amount of titrate and the amount of digi-cells and bacteria that we removed with this particular sort of machine.
It is pretty total, once we have done the pressure washing, and the pressure washing can be cold or hot water, and then after that, we can also follow it with and ozone rinse afterwards. So it basically sanitizes the inside of the barrel without leeching too much new oak away, and it work very, very well.
Saves us a huge amount of time, it is a lot easier particularly for Conner, who is going to put the old barrel washer in, wait five minutes for it to wash and then move on to the next barrel.
So well, the great thing is, while this is washing, he can be doing something else.
