What is Tamarind

Also known as Indian date, the tamarind fruit comes in various forms and is a fundamental ingredient used in many different cuisines.

Here is what the fruit looks like. Inside are hard seeds which are coated with a tangy sticky pulp. Tamarind is commonly sold in this brick-like package which is preferred by many cooks as it has the most natural flavor. It also comes in a stronger concentrated form which is often used in recipes that call for tamarind water or tamarind juice. When a recipe calls for tamarind pulp, it’s generally referring to tamarind that has been soaked and strained creating a smooth pulp.

To prepare this, break up the tamarind and pour a hot water over top, using about two cups of water for about a half pound brick. Let it sit for at least 20 minutes or even overnight to soften then mash with a fork or your fingers to loosen the pulp, then press through a sieve. If stored properly, tamarind will keep for a few days in the refrigerator.
