What is Galangal?
Galangal or Thai Ginger adds a unique Thai Flavor to many dishes, similar in appearance but not entirely in flavor to its familiar relative Ginger.
Galangal is highly aromatic and has a more delicate flavor than Ginger, with the Swedish earthy aroma and hint of Citrus, when buying Galangal buy pieces that are light in color and have few or no brown spots, they may also have pinkish shoots.
If you can not find Galangal you can substitute with regular ginger you will just have a slightly different finish. To use Galangal simply slice, dice, or grate just like regular Ginger.
