Female: Now, we get at Turkuaz, a restaurant located on the upper west side of Manhattan. It’s décor is unique and then it has tinted rooms to which are reflective of the Ottoman empire. Let’s go in and see for ourselves. Ahmet Atilgan: My name is Ahmet Atilgan. It’s a long time since I came to the United States. Originally, I’m from Ankara. I was working at Terita. And then, I stayed here. And then, we decided in June 2000 to build this restaurant with my partner and we continued. Hakan Karsavuran: This is because we are located at 2627 Broadway which is at the corner of 100 St., West Side. We have about like 50 tables, we can serve at the same time like 200 people. There’s something special about the Turkuaz. It’s not mostly on decoration, it’s kind of the way that you get inside. It takes you to a feel like you’re in a tent. Man: The thing is, like in New York City, there are like thousands of restaurants and everybody believes that they do the best foods in town. I mean, wherever you go, you get what ___ success. The best fish in town, the best food in town or something like that. But the thing is that Turkuaz not only differs because the food is so good, but other than that, the atmosphere is so unique. It’s like that the whole restaurant is designed as a 17th century ottoman tent. Six years ago when I came to New York, there was like just a couple of Turkish restaurants over here. So people were like just getting what you serve. Because there is like few Turkish restaurants, they weren’t sure what really a Turkish food is. But now in like six years, everything changed. Now, there are like tens of Turkish restaurants and actually people know what they are getting. Dilaver Aydin: I have many years of experience. 30 years, I have started in Hilton Istanbul. I love cooking. There is only one secret. I love this job. Ahmet Atilgan: The American people, they love Turkish food. They love everything about Turkey.
