Darren: Mm bacon. Yo mate. Hello, welcome to an eclectic episode of making it with Darren, I am your host Darren Barr and we’re here tonight, the ladies have requested macaroni and cheese, and you know what we had so many recipes, I have so many recipes in my head, but I wanna make for macaroni and cheese and we couldn’t decide on one, so, I’m making three different types tonight. We’re gonna do a great tasty different, you know, like, what’s the word I’m looking for Greg, you know, like a buffet, like a macaroni and cheese buffet, whole assortment of different ones. So, we’re gonna start, we’ve got our bacon and extra sharp cheddar cheese, which is gonna be a macaroni and cheese, we’re gonna do a sautéed onions and chili, with a nice javardi macaroni and cheese, and then we’ve got our sun dried tomato and garlic with mozzarella cheese macaroni and cheese. These all looks so freaking amazing and I cant wait to even get going. We’ll start with our bacon and cheddar. First things first, what you wanna do is you wanna get two tablespoons of butter and two tablespoons of flour into a frying pan, so the trick is, as you have the butter and flour in here you wanna add the milk slowly to make sure that you whisk well that all gets fully incorporated in there, so you get quite, yeah, incorporated, exactly. I promise, you don’t want globs of flour floating around in your macaroni and cheese, that doesn’t make for happy ladies, when you’re making your mac and cheese. So our milk is hot we’re gonna add our two cups of cheddar cheese, actually it’s extra sharp cheddar cheese, which is so good. and we’re gonna keep whisking this until it gets nice and melted, it’ll turn it almost into like a fondue. I’m totally tempted to, oh look at that, look at how pretty that is, that looks so good. so just as it melts like that, we’re gonna add our bacon. Greg: Bacon fondue. Darren: oh yeah, now we’re gonna go ahead, we’ve got some mac here, now this is enough for three, we’re gonna have about 8 ounces of cooked elbow macaroni, as we’re going here, look at this all it sticky. I’m gonna mix this up. Greg: And this is number one. Darren: That’s it mac and cheese number one. We’re gonna go ahead and put this in a baking dish, we’re gonna move on to mac and cheese number two and yeah. Just keep rolling through man, we’ll just keep rolling through. Alright, so we’re ready for mac and cheese number two, this is our chili pepper – onion we’ve got pisi chilis, Serrano chilis, jalapenos, some red onions, I’ve got two tablespoons of olive oil heating in the pan, we’re just gonna dump this in and let this sauté. Now we’ve salted those lightly the last one, the bacon and cheddar, we didn’t salt too much just because bacon has a lot of salts in it, but definitely you wanna do that to taste, the base for all of these maca, mac and cheeses is two tablespoons of butter, 2 tablespoons of flour and 2 cups of whole milk, that is gonna be the base for all of these. Alright, so our peppers are ready to go, we’re gonna go ahead and add this to our milk, flour, and butter mixture. Alright. Mix that up, gonna grab our awesome two cups of shredded javardi cheese, add it straight in here. this will gonna melt, this is will be really creamy, let’s go ahead and get the heat off and go ahead and add our macaroni to this, anything else is a macaroni. Greg: Coz macaroni’s getting around. Darren: Yeah it is. Alright, and that will be that one. And that will be the last of it, we’ll save for other one. Greg: That’s for mac and cheese number three. Darren: Oh yeah, man. And this is very creamy. It should thicken up after we bake it. It’ll be awesome. Alright, mac and cheese number three. We’ve got our sun dried tomatoes and garlic, we’ll gonna go ahead and throw this in the frying pan to get this puppy going. When that’s good and cook, we’re gonna do our flour and butter base again, get some nice mozzarella cheese in there this time with our milk and we’ll get this baby rolling. Yeah, we’re just, we’ve just added our garlic and sundried tomatoes that have been lightly sautéed, I’m got some, some background music. Greg: Crazy liquors out of there. Darren: Crazy. Alright, we’ll go ahead and add our mozzarella cheese to this. Oh yeah. That nice and Greg: Let me guess, you’ll gonna let that melt up and then we’re gonna add some macaroni noodles to it. Darren: Dude, you have got it down, I think, I think that if you’ve got this, you viewers at home have got this in the bag. Greg: Yeah, exactly. If I can do it, anyone can, right. Darren: This is the trifecta, right here man. Let’s see it. Oh yeah. Greg: That looks delicious. Wait, do it again. Oh yes. Darren: Alright, let’s get this, the last of this macaroni in here. Greg: Now that’s the last of it. Darren: So… Greg: This looks like, if I had to guess before even trying anything… Darren: Which one is your favorite? Greg: This one is looking good, dude. I love bacon, but this one looks damn. Darren: This has definitely have the consistency we’re looking for. Greg: This has the consistency. Darren: That, that javardi is a little thin, you know, we’ll, we’ll see what happens, let’s go ahead and add some salt to this. Greg: Well that’s the point, we’re testing this out, man. We’re gonna taste them when we’re done. Darren: Gonna add some salt and we’ll just gonna mix that up a little bit, oh, that looks good. alright, let’s get the heat off , let’s get this in the pan, then all these babies are going into the oven for 20 minutes to 350 to finalize, crisp up on top, get those nice little delicious edges and then we’ll be ready to grab, man. We’ll be ready to grab. Alright guys, 20 minutes is in, our mac and cheese should be ready to go, we’re gonna start with our first one, ooh this looks good. this is our garlic, sautéed garlic and sundried tomato with mozzarella cheese mac and cheese. Next one, is our creamy javardi with sautéed pepper and red onions, which looks amazing as well. Last one, last but not least, extra sharp cheddar cheese with apple wood smoke bacon that we’ve chopped up and put it in there. go ahead and close this up. now we’re joined by the lovely Cassie and Kate, and they’ll gonna help us taste some of these stuff, so a… Greg: Let’s dig in. Darren: Let’s dig in if we can, it’s gonna be hot, so be careful pips. Greg. Oh my god it looks so amazing. Kate: I’ll try this one. Cassie: I’m wanna try this one. It’s all crispy Kate: Oh ah, really, this is so good. Cassie: It’s really, really good. Kate: No, this one. Darren: Alright ladies, any closing words? Kate: Yum. Cassie: Mmm.
