To do a stuffed chicken wing, these are always fun. People didn’t know that you could stuff chicken wings but you can. So this is a cleaver. When I’m buying a cleaver, I basically look for a few items. I’m looking for a fairly sharp blade but I’m also looking for just sentimental weight. What these cleavers are made to do is to go through bone, so what I’m going to do is I’m going to, on the end of my bone, I’m just going to knock off one end of it. Let’s do this twice. This way we can see it for the camera. Ok, there are two bones of my chicken wing. There’s a larger bone and a skinnier bone. What we’re going to want to do is push the meat down along both sides of this bone like so. Once I get all my meat down as far as it can go, I’m going to take this little bone and bend it out. So this little bone comes out. And then I’m going to turn the rest of this meat inside out so now I have a completely French bone on one end. And I have a cavity to put a stuffing here. When you cook these, these are beautiful for h'orderves. They’re very nice garnish to the rest of your chicken plate because it has a very nice handle for people to hold on to. We’ll do that one more time. I’m going to bring the meat, slide the meat down to these bones. I’m going to push this particular little bone out and then invert the rest of the meat so that now the skin side is on the inside and the muscle is on the outside. Now this is stuffed chicken wing.
