Dan Hernandez: This week in the gallery we’re down here at the beautiful Hotel Corel Marina Resort and beautiful in Ensenada, Mexico. Standing next to me is Claudia. Claudia, thank you for having us today.
Claudia: Hi! Thank you.
Dan Hernandez: And today we’re going to be doing a cooking segment down here in this beautiful resort and who are our chefs today?
Claudia: Today we have Rafael Lopez. That’s our head chef and Erasto Moreno. He’s also cooking for us.
Dan Hernandez: Okay, cool. And what's that they're going to cooking for us today?
Claudia: Some delicious fresh scallops.
Dan Hernandez: Scallops, all right, cool.
Dan Hernandez: You're located in this hotel resort just north of the town of Ensenada, very close. And you have a huge marina. I know people actually leave their boats here year around too right?
Claudia: Yes, they leave it here, and even some of our guests they stay a few months to live here. They love it.
Dan Hernandez: Yeah, and what's neat is they have full facilities here. They have electricity for the boats, they have fuel dock. Peter runs the dock down there. Peter has done a great job and the dishes that we’re doing here the scallops, is this something that’s somebody can come here and order at the restaurant?
Claudia: Yes. You can have great dinner with these sea scallops.
Dan Hernandez: So warm up the butter.
Rafael Lopez: And salt, a little bit that wine on that.
Dan Hernandez: A little bit of wine. I have never seen a butter that comes with chili in it so that’s really kind of neat. I look forward to trying that. And what are you going to cook over here now?
Rafael Lopez: The carrots.
Dan Hernandez: Okay.
Rafael Lopez: I want it to go into this, one minute and that’s it.
Dan Hernandez: Reno Blanco. So, all the ingredients are all cooked so now we just go ahead and plate it all. So make like a little bed of white rice.
Rafael Lopez: Yes.
Dan Hernandez: Okay. And all the ingredients that you're using today are all local ingredients from Ensenada area?
Rafael Lopez: Yes, everything.
Dan Hernandez: Everything?
Rafael Lopez: Yes.
Dan Hernandez: I should try it. I've never tried frying my carrots with the olive oil. That’s probably good.
Claudia: And the taste that gives it, the wine.
Dan Hernandez: Yeah, and the butter.
Dan Hernandez: The garlic and the butter.
Rafael Lopez: Yes. Now a little bit wine.
Dan Hernandez: We’re going to want to taste this one. I'm sure you’ve had this several times with the restaurant before, huh?
Claudia: Yes. It’s my favorite.
Dan Hernandez: Is it your favorite dish here?
Dan Hernandez: And just local scallops with the butter and garlic. All right, jump in here. Come on, Claudia. I can get some of these chilies. That is so good!
Dan Hernandez: That is such a great dish! Thank you, Rafael.
Rafael Lopez: You're welcome.
Dan Hernandez: This is a great dish. Gracias Erasto. Great beautiful dish and get it right here Hotel Corel Marina Resort. Come on in and order here at the restaurant. It’s delicious! If you’ve never been down in Ensenada, I really recommend you come on down here. It’s a great place to spend a weekend with the family. A whole week just to see the whole region there's lots of great things to do.
