Thanks for stopping by I'm Chef Billy Parisi, you’re watching Fix My Recipe. I can't tell you how many emails I get over the holiday season asking, what is the best way to make mashed potatoes? Well you know what I got an amazing roasted garlic and you canned mash potato recipe that you’re going to love check it out.
Time to priorities this recipe and we’re going to get roasting our own garlic. And you know what I'm not going to roast it in the oven either I'm going to do it right on the stove top. So pour in some olive oil in a sauce pot we’re going to put in some garlic cloves and unload to medium heat. It’s going to cook for about 20 minutes.
While our garlic is roasting we’re going to prepare our potatoes. I'm going to use Yucons, feel free to use Idaho. We’re going to go ahead and peel them, quarter them we’re going to hold them in water them ready to cook so they don’t brown. We’re going to transfer these potatoes to a pot with water in it and you know what its going to give this even more garlic flavor. That’s right more raw garlic cloves.
We’re going to cook it right in with these and you want to salt this water and you know what you wanted to taste like this is sizzle that so much salt you should put in. try it when your done if its nice and salty you know you're on point. Now its time to put this pot on medium to high for about 20 to 25 minutes.
It’s been about 20 minutes our garlic is roasted and this is the consistency that you want every single time. Now it is time to mash these garlic so on the food processor we’re going to puree it until it becomes a paste and this is the best part. Its going into some heavy cream that we’re going to heat that is flavored. Don’t you forget it and you know what we serve that garlic olive oil because it’s wonderful to cook with.
All right our potatoes are done. Now we’re going to run into a food mill to get these potatoes as smooth as possible and then we’re going to put in all these goodness. I realize nutritionist aren’t going to like this but you know what I was taught 50% fat, 50% potatoes so we’re going to throw in some butter. We’re going to use some of that garlic cream a little bit of extra virgin olive oil and we’re going to season the taste with salt and white pepper.
The beautiful thing about using a food mill is our potatoes are already smooth so all we’re going to do is simply fold in all those ingredients. Oh men this look and smell amazing and you know what it was pretty easy to make as well. You can find all the se ingredients at your favorite lowest food stores. You know what I can't wait any longer I got to eat some.
