Roast Broccolini and Beans Recipe
Preheat our oven up to 425 because we’re going to oven roast our vegetables. Now I’ve got a combination of Broccolini and green beans but any vegetable taste really nutty and have a unique flavor when you roast it in a high hot oven. So I’ve got about two bundles of Broccolini here, this is not hybrid of broccoli and some where they made it this beautiful long skinny stocks and the whole thing is edible, that’s why I buy it because it’s a good value to make.
So I just trim up the very ends but you could also substitute a big head of broccoli no big deal and cut it into nice skinny florets. I’m also going to grab one pound of beans, I trimmed them up when I brought them home from the store, but you could also get already trimmed green beans that are still nice and fresh right in the regular fruit section. You just pay a little bit of extra premium on them you know to take some help from the store.
Now Broccolini it’s wonderful because all you have to do is trimmed up the very, very ends right when you bring it at home from the store and trim these guys up and I’m going to give him a fresh cut there. Broccolini is this neat little hybrid and you can eat the whole spears nice and tender. Broccoli floret we’ll create to that and it’s just got do a little more traffic.
So, I’ve got 2 bundles of Broccolini here so we end up with about somewhere between 2 and 2 ½ pounds total of vegetable for six people. These are six grown people, you could feed eight people of a couple of them are a little itty bitty, you know I’m going to coat them all with some Evoo, nice and simple guys because they will develop a nice nutty flavor in the oven. Evoo, salt, pepper, drop them right in the oven and let them roast and over here I pulled out our wonderful oven roast Broccolini in green beans, any vegetable you can think of guys taste absolutely fabulous and how easy is it to make when you roast it up in the oven.
The vegetables get almost a nutty quality to them so I’ve got my green beans and Broccolini just salt and pepper and an olive oil, done.
