Mia: The first thing we’re going to do is some lemon thyme water. I'm going to put about one lemon worth of slices into this pitcher. And then if you can hand me some of those thyme sprigs. Oh that’s great. I'm going to squeeze it a little to release the oils. Stir it up. And then I'll show you how we’re going to make the raspberry champagne cocktail and the zest of the skin from the lemons.
Okay, to garnish the raspberry ice cubes. You got it! Wonderful oil, I have some raspberry juice here. I'm just going to fill an ice cube tray. I got this sort of fun ice cube tray. So we have some cute raspberry things. I'm going to take chopstick and I'm going to wrap this around, like little pigtails. And put this in there like that. You see how beautiful that is? They will stay sticking out like that. It's just a beautiful visual effect.
We’re going to make the muffins today and they’re peach muffins. The secret to it is putting sour cream in the batter. So I'm just going to make the batter. Finish it up right now. What you could do is actually make the honey butter. So there is some butter right there. I'm going to ask you to pour a little bit of honey in it.
That looks perfect! Great! And I'm going to put the peaches in here now. And then I'm just going to stir it together. Put that into a little bowl. And then we’ll put it in the refrigerator and just keep it there until tomorrow when your guests arrive. This batter is all ready to go. You know a great thing you can do with peaches if you can't get them ripe, you put them in a paper bag.
That's beautiful!
For dessert, Elliot and Mia prepare a cardamom coffee and cream granita.
Elliot: Granita’s are usually made with fruit juices or you could use tea. You can do with almost anything really. You know just a nice liquid. So what you could do is just split this open for me like that. And take those nice little seeds and dump them in the bowl. And we’re actually going to mix this with the coffee.
Mia: Once the seeds are released, they’re placed into the coffee maker with the coffee grounds. After the cardamom coffee is brewed, it will be combined with condensed milk and then frozen. In two hours, it will become slightly slushy. At that point, you want to mash it up with a fork and then freeze again overnight.
