Alright, I am just trying to pull all my ingredients together for this taco soup and I’ve just got to try these. You and Michael Gurdy, they are delicious. I want to put these to the side though because I really want to get this soup together. And as you can tell I have had a lot of distractions so I’ve kind of burned a couple of things and oops may be on the way to burning the next dish.
We are going to toss in some diced onion and I am just going to brown this hamburger meat. Now, I love to make this particular soup in the crock pot and just let it simmer for six to eight hours. But the way I am going to make it today brings my cooking time down to 45 minutes to an hour. Alright now, I am using a slotted spoon and I am going to transfer our ground beef and our onions to our soup pot. This is not going to take long. Now to put our soup together, we are going to add a can of kidney beans with the juice and then I am going to add two cans of pinto beans. Alright now, I am going to be adding three different kinds of tomatoes to this soup. I am going to add a Mexican tomato, tomato with chilies and just a regular diced tomato. So, all we have to do is just dump, Alright, that takes care of the tomatoes. To this now, I am going to add a can of whole kernel corn, some green chilies, some black olives and some green olives, taco seasoning; and that is going to give us that Mexican flavor, one package of dry original ranch buttermilk dressing and we are going to let that simmer for about 45 minutes.
We are going to add some beautiful green onion tops. So, look at that beautiful pot of hardy soup. Now, the beauty of this soup is you can make it two days in advance or you can even put it in the freezer and it will last up to three months. Alright, I have got another pot ready over here in the crock pot because it will maintain just the right temperature. And we are going to pull this out later on when I am really, really short of time. Alright, so I want you to see what it should look like after it has been simmer and they will never know I have been in this. Now, let me show you all the way I like to eat chili and taco soup.
I am going to start by getting the tortilla shells and then I am going to ladle my soup on it, and I like that juice. The first thing I am going to do is sprinkle me some cheese so it can melt. We just love jalapenos and I am just going to pop out those seeds. Michael likes these, it will make his hair stand up and flip his lid. Alright into these, I am going to add sour cream.
