In Ireland the phase is slower and richer in texture than in many countries. Nearly everyone takes the time to invite acquaintances for a cup of tea and conversation. Just a few miles from Hans and Gabby’s farming cheese is Ireland’s new organic farming center created in the last few years to further education in organic farming. There is a conference center for classes, discussions and meetings.
The center was build using examples of the most environmentally friendly architectural techniques of the 21st Century, blended with proven techniques from the past like solid roof.
Though modern dairy herds are very productive, subscribers to the theory of organic farming believed these old and nearly extinct Irish Carry Cows are better for the farmer. They are lighter than waste and less destructive to the soil, yet producing adequate harvest of milk. Carry Cattles are most probably the descendants of the Celtic Shorthorn brought to Ireland as long ago 2000 BC. They’re still found grazing in the marginal pastures of the hilly districts of Southwestern Ireland.
In addition to cows, they have chickens, sheep and ducks all raised in organic environment. There are a dozens cultivated greenhouses, practical classrooms where future organic farmers can actually work the soil, tends to crops and see how well this techniques work in practice.
Farming in 21st Century, a modern farmer visiting the center for the first time, organic techniques may seem a little backwards into what many had been thought in university farming courses. The principle of organic farming to which the center subscribes, growing without pesticides, fertilizers and other chemicals.
