Female: So Terry, what makes the experience here at Journys so unique to the Caribbean?
Terry: Well, we use fruits and flowers from the island and we incorporate those into our treatment, exfoliating, invigorating, relaxing and they smell wonderful.
Female: So Terry, now is my lucky day today because you’re going to treat me to a stone massage.
Female: What can you tell me about that process?
Terry: Sure. The stones are warmed up. They are beach stones, beautiful flat stones that are carved by the Caribbean waves so just a nice light stone and they’ll be placed in locations on your body. You will be feeling your muscles just melt away. It is great for lymphatic drainage and it's just a wonderful relaxing spa experience.
Male: The design of the restaurant is more of a Cuban-Latin kind of a South American feel. We use different cooking techniques like from France because we got a lot of French and Dutch influences over here. So we’ve taken a Caribbean food and influenced it with a little French and a little bit of Cuban. So it is kind of a Cuban-Latin--. I will kind of basically show you a basic saute—some sauted shrimp where I’m going to use some Caribbean aroma in it. So we just want to heat up the skillet in a nice, hot, quick saute.
Female: So what do you have in the pan? What are the key ingredients?
Male: Greenland mussels and some freshwater shrimps. With a Moho which is citrus vinaigrette, add a little bit of sugar in it so we are going to try to take the sugar to where it starts to caramelize a little bit and we’re going to glaze it on. So, I actually—I’m going to flame it up right now
Female: So, should I stand back?
Male: You might want to stand back a bit.
Female: So there it goes.
Male: That's about it.
Female: Looks delicious. So how do you server that?
Male: This would just be like a chef’s special. We could serve it with some Yukon, mashed potatoes and we can do a little—like the Moho that we have talked about, we put that with a little bit of cream maybe and with some little balsamic drizzle.
Female: So as you finish your day of pampering here at St. Thomas, what better way to close out a wonderful luxurious experience than with warm lovely bubble bath.
