We’re going to get started with our cheesy mushroom casserole with our broccoli. So I’m getting my shiitake mushrooms, get some heavy cream, my chicken stock. So what I going to do right now is just get the onions, the mushrooms, the garlic, everything ready to go for the pan and then start my roux.
Now, I’m going to use some shitake mushrooms, the kind of meaty and the steam is very woody so I take that off and slice up the cups and get then ready for the pan. My roux, which is basically butter and flour that, are going to, thickened my casserole. That’s the color I’m looking for when you make a roux butter and flour, you’re just looking for the right color. I’m just going to put in everything that I chopped up, onions, they mushrooms the garlic. To this we’re going to add some flavor, put some little heat in there, some cayenne and pepper. I love it smokey, fire everything I like and then some garlic powder and so this I want to just start adding all of my ingredients. So we’ve got my chicken stock add that first and put that in, if you got some beef stock go ahead, turkey stock go ahead.
Around thanksgiving that’s when you start finding the turkey stock in the grocery store like we can have that year round. All right this is going to add some flavor to it. Do not do water and the heavy cream, now let me tell you. You can so do this casserole with one of those cream of mushroom cans so three cups of cooked rice go right in and on top of the cook rice the best buy in the grocery store your frozen broccoli it’s chopped right over the top.
Now look if you don’t feel like the frosting and straining like me put it on frozen do it all the time and then I’m going to add my cheddar and my Monterey Jack, half in and half on top. I’m just putting the finishing touches on our broccoli and mushroom casserole. The cheddar and Monterey Jack right over the top. 425 degrees broccoli and mushroom casserole, remember the shitake mushrooms. I can see some of it kind of sticking out here and I’m going to get a little scoop of my casserole now and start building my plate.
Let me tell you this feels like comfort food. I want to sit on my couch after I scoop that out.
