Our new fix goes to Gunther of New Orleans, Louisiana. He submitted a fix. He wants to know how to make Indian food. So, it’s kind of in this rough times, it gets really expensive. He wants to do a couple of things at home. You know what Gunther, I’m going to dedicate a couple of fixes to you. Here’s the first one.
Gunther, the first fix we’re doing is Mulligatawny soup. It’s probably not the cheapest thing but I’m going to make it in bulk so it’ll last at least two weeks. This is apple chicken curry soup. It is unbelievable.
So, in a huge pot with some sesame oil, we are going to caramelize onion, celery, carrots, garlic, ginger, tomatoes, red peppers, and some jalapeños. And of course, let’s not forget our apples. Gunther, this is perfect timing because while all those vegetables are caramelizing, we are simply going to grill off our chicken. Be sure to salt and pepper them very well. Put them on a grill, cook them completely, and then we’re going to set them aside.
All right the chicken is done. Our mixtures are still cooking at this point. We are going to add in a blend of seasonings, little bit of turmeric, coriander, cloves, nutmeg, and cumin. And we’re going to cook these out probably for a few minutes. We’re going to head it with some chicken stock. Add in our lentils. Dissect that chicken that’s going in there as well. We’re going to let it simmer for about 20 to 25 minutes. Once those lentils are done cooking, it takes about 20 minutes or so, we’re going to go ahead add in our diced Yukon potatoes, fresh cilantro. We’re going to finish with coconut milk that just seasons a little bit. And you know, I’m going to have myself a bowl.
Gunther, lots of flavor in this soup. And I know a traditional Mulligatawny is actually a really smooth in soup. I like it to be chunky so you know what, it’s going to be chunky but don’t be scared if you want. But regardless, use this recipe. You are going to love this brand new fix.
