Dandilini: Hey, I’m Dandilini and I’m traveling the world tasting the best free food around, today we’re in Seattle and were taking a look at a beautiful air stream dishing out amazing cuisine, only in vendor TV. So behind me is skillet street food, its the place for mobile gourmet in Seattle, check it out. So I’m here with Josh Henderson, Josh is the head chef at Skillet and his also the co-owner. Why is there such a small street cuisine in Seattle?

Josh Henderson: Basically just because there is a band on the street of the city within the city limits and they limit it to espresso, hotdogs and popcorn.

Dandilini: Tell me a little bit about the inspiration, how did you come up with the recipes that you serve?

Josh Henderson: Our focus is more kind of I guess modern American comfort food with a twist.

Dandilini: So we are going to go and we got some food. Great, so this is their burger and they coat it with this like bacon jam, which is like bacon, and it is cooked down with spices, I’ll take a bite, the meat is like really well cooked. It’s like medium to medium rare with this beautiful cheese, its really mild and melted and dripping all over and then the bacon jam right on the top is really tasty. It’s so sweet as like a sweet thing and also like a salty with a bacon pork chop but not worth it. There is peanut in there and some curry and stuffs, really, really great and so tender, just so—so this is their puppy dog pastel and it has a mountain load of pastel with peas in it.
