Female1 – So how does salad sound for dinner? Ok no groans, just give it a chance why don’t you. We got a healthy and delicious salad recipe from the geniuses behind “Just Salad”. You can check it all out and today’s better bites. Female2 – Today we’re making a Mediterranean salad for winter using some of the ingredients that are valuable throughout the year and especially still valuable in winter. Mediterranean eating is generally, innately helpful so we do not have to worry about like trying to find ingredients that are just there and they’re naturally helpful, very colorful, very flavorful and we’re going to make a vegetable puree dressing really easy. Red peppers, we’re just going give a little flavor with a little garlic. Definitely need a little of acidity in any salad. So we’re going to give it a little bit of shower of vinegar, a little squirt of oil to emulsify it, not much because if peppers are going to get nice and smooth and creamy, some salt, a little bit of pepper and we’re going to puree it and if we need to add water that’ll help to get a little thinner to the consistency that we need. So we’re going to now make our salad. We have our salad dressing. All salads obviously start with some sort of green. I like to mix them up so that they have like a little kind of crunchy texture and also some flavors. So like arougla maybe with some iceberg or romaine which has a little bit of crunch with maybe spinach leaves and today I think I’d like to use some ondiff which is really great in the winter. It’s a great winter ingredient. So with romaine, I have some diced in a bowl here. It’s really easy. This is the heart of romaine. It’s a long sort of slender, inner crispy part. You can just cut off the ends and then just cut it across the bias and you have some nice crunchy greens you can add to your salad. And with on this same thing, you can just cut it across the side. So now, it’s just assembling. We have our dressing made. We can just sort of marry everything together in a bowl. Hartsipun, they are just so nice and sweet. And they can just make a Mediterranean salad, olives of course, if you want olives in that Mediterranean salad. There are also, they add that a little bit of saltiness to the salad which you know you can add salt or you can get it naturally in some ingredients. I like adding a little cheese or olives rather than adding salt. And then we have some white beans. These are like cannellini beans. Feta cheese, this is Mediterranean. We are going on the Greek side here. And we use roasted cheek peas. What we do is we roast them until they are nice and dry and dehydrated; and nice and crunchy. And that will add a nice crunch to the salad. The only thing we have to do is to add our dressing, we’re all done. And we’ll toss it up. And we have a nice salad for four, right here.
