He is the executive chef of one of the big easiest favorite eatery, Chef Matt Murphy takes this into his kitchen at M Bistro at the Ritz Carlton in New Orleans to show us how to whip up a tasty mandarin orange salad, it is all in today’s better bites.
Matt Murphy: Welcome back, we are back in a kitchen at M Bistro at the Ritz Carlton in New Orleans. We got some simmers and we talk about the—simmer as a Mandarin orange, we got some tomatoes. I put two different types here and we look that on tomatoes closely, we have a nice tomato here and then we had this tomato that the farmer gave us and then around with this we just going to cut it and make it into stew in tomato or something like this. You make a sauce out of this tomato and this where you are going to use it in a salad. Before the salad what we do is to pick out some of these leaves, just pick out some nice leaves and what we are going to do is we are going to take those leaves, just like so and we got this to tuna. What I want to do is just chop on a tail on it and take on the skin of it because I just want here there is too more meat, the fruit part of it, and just I need a little trick instead of—they're having some of that white pit in there and just do it like so.
If you have a Mandarin or you a good navel orange, you can do the same. We are just taking our radish and we are just going to shave it right over the top. This is a Japanese Mandolin so we just shave it over to salad. This plate would be just, I just serve it at home and everybody was just sort to dig in. We have this here, we are going to make a vinaigrette. The vinaigrette is going to meaty and flavorful. We got some of those diced tomatoes, we diced them up, put these tomatoes right in, we got a little olive oil and this is cane vinegar very sweet flavor similar, if we cannot get this we could use rice wine vinegar very similar. So this going to be our dressing, we are going to make it a fast dressing, the cilantro. We just actually of the cilantro diced, we are going to add that in, this going to give a really nice flavor. What we are going to do is just dress our salad with it like so. All right you can serve this to a group like that, pretty much. We are going to have this already done ahead of time and then we have this Kashkaval cheese which is from Bittersweet Plantation Creamery, it is kind of a Bulgarian style cheese and we are just going to shave that over the top, it is a cow cheese, semisoft, and not hard at all, and let us going to shave that over the top as we go through it and that was place here our salad right there. It is very simple. Ingredients you make, you have to do too much because the ingredients are the best part of it, it is right there Satsuma, makes green Satsuma with the olive oil, cane vinegar and cilantro dressing.
