Lobster and Avocado Cocktails
Bobby: Everybody I'm Bobby Flay and welcome to Grill it! Today we are cooking one of favorite ingredients lobster tails. I mean what’s better than that? My guest today is Chrissann Brunsmann.
Chrissann: I’m coming from Los Angeles California. I’m going to be making a chocolate lobster taco. Today, I hope that I can do pick up the new tips and I cannot wait to grill it with Bobby Flay.
Bobby: Chrissann come on down. We’re going to make a lobster on avocado cocktail. Chrissann what have you’ve got going over there?
Chrissann: I've got grilled corn, jicama, some poblano. I've got my lobster almost done on the grill for my chocolate lobster taco.
Bobby: What I like to do is actually hard boil the lobster at about 3 quarters of the way because I find that when you’re grilling lobster from its raw state, sometimes it has a tendency to be a little bit chewy. So what I'm going to do is to take knife, a very sharp knife and I take my hand and I just go down like this so that I get the knife into the shell. Now it’s a lot safer for me to go down and actually cut the lobster tail in half.
See how nice to creamy that is, it’s just a little bit rare on the inside. So I’m going to take a little bit of canola oil and I’m just going to brush the flesh of the lobster and I’m going to finish the lobster on the grill.
Alright, here’s your lobster, I’ll have to cut to, would you like to try some?
Chrissann: I would lobe to try some. Bobby Flay cooked me something. I don’t – this is supposed to be a dream.
Bobby: It’s very sweet.
Chrissann: That is amazing. I don’t know how he does it. This is incredible. There you go Bobby Flay
Bobby: Can I do it?
Chrissann: Bobby Flay is eating my chocolate lobster taco and I couldn’t stand it.
Bobby: This is seriously fantastic; I need to tell you why I liked. First of all, I have a great spice to it, I’m all about that. The goat cheese has a really nice creaminess and it kind of chill those out. The lobster is like perfectly cooked and it think one of the things I liked most about it is the texture of it. It’s crunchy and it’s crispy and the chocolate with the bacon, you know you get the smokiness and the chocolate isn’t sweet. It just kind of balances it out the smokiness.
I want 40 of these lobster tacos, these are delicious.
