With five minutes of preparation, four ingredients and one pan, this instant pesto chicken recipe is a super fast dish for a busy weeknight.
In a large roasting pan, mix 2 ½ pounds of chicken, 1 ½ pounds of baby red potatoes, a pint of grape tomatoes, ½ cup of jarred pesto, 2 tablespoons of water, 2 teaspoons of olive oil and a pinch of salt and pepper.
No chopping required which means no dirty dishes. Always thumbs up in my cookbook. Then simply toss the pan in the oven for 45 minutes at 425 degrees.
Take this break to read a chapter in your book catch up on the news or do some relaxing yoga stretches. Forty-five minutes later dinner is done.
