Hi, I’m Chef Jason Hill and this is a smoker box. Grill box smokers are a great way to turn propane grill or gas grill into a temporary smoker. Smoker boxes are used to hold wood smoking chips and are placed over the burners to produce smoke flavor for your grilled food. The smoke escapes to these holes and fills your grill with smoked flavoring goodness.
Today, I'm going to smoke some fish. And I'm using the mesquite wood chips because I find mesquite goes well with most seafood. Presoak your wood chips at least 30 minutes before adding the box. And then use to fill the box up a little over half way. Most smoker boxes will come flat and some grills can accommodate that, so I've got this v-shape one that’s fits right there on between my burners covers. So, if you’re going to go out and buy one of this, you want to measure the clearance between the grill and your burner to make sure the smoker boxes are going to fit.
And it just sits right in there and we’re going to preheat this on high and as soon as it starts to smoke we’re going to throw our fish on. All right, after being on high for 10 minutes there is still no smoke so I'm going to close this back up. I’m going to check them in another five minutes. All right, after 20 minutes on high we've got smoke. We’re going to set this on low and add the fish to the grill. Today, I had four fillets of tilapia that I seasoned with my lemon herb marinade. And let’s add some smoke to them.
Now, I close the lid. I let this cook on low because it will cook a little longer and I get some more chance to soak up that smoked flavor. I hope you enjoyed this little demonstration on the smoker box. It’s a great recipe to your gas grill, thanks for tubing in.
