How to Segment Citrus Fruit

To segment or section citrus fruit, start with a sharp utility knife and cut off the ends and
set the fruit flat. Then following the shape of the fruit begin, to cut off the outer peel
along with the white pith. You will need to change the angle of the blade to match the
curvature of the fruit. Once you’ve made it all the way around the fruit, make sure to
remove any bits of white pith that maybe left behind. If you want to, you can now switch
to a paring knife to section the fruit.

Over a bowl, hold the fruit in the palm of your hand to catch any juice. Now, cut between
the membrane and the pulp towards the center. Then cut on the other side of the
membrane to loosen the fruit. As you go, fold the empty pieces to one side like pages of a
book. Once done, squeeze out the excess juice.

This technique will yield more delicate pieces of citrus which are particularly nice when
using them in tarts, salads or as a garnish.
