Cynthia Sass: Whether you have heart disease or you're trying to prevent heart disease and let's face it who's not in one of those two groups? It's not about lowering your fat. It's about eating the right kind of fat and one of the best fats on the planet comes from olive oil.
It's really important to get enough fat in your diet. Cutting your fat too low, can end up harming you instead of helping you. Eating olive oil can help to lower your total cholesterol without lowering the good kind, the HDL. What HDL does? Why it's so great?
It that it helps to take cholesterol deposits that are in our arteries and around our heart and take them away and clear them out. They can be eliminated from our body and that lowers our risk.
So don't get rid of fat altogether, just choose the right kinds of fat and you can get lots of flavor and actually believe it or not, you can absorb about 6 to 8 times more vitamins by using some healthy fat on your salads and on your vegetables than if you use none at all.
