Hi I am Chef Keith Snow welcome to my kitchen.
I am going to show you another very simple fresh tasting vinaigrette to add your growing list.
So easy to make this, this is Lemon Thyme vinaigrette.
First of all this is thyme and this time of year, it actually flowers, this comes right on my garden, I grow this stuff pretty much year around. Get yourself a pot full of thyme and keep in mind they also have a variety of thyme that is called Lemon Thyme. And if you smell it, it smells like lemon juice. So this is the thyme looks like when it comes off the bush.
So to get started, we have one clove of minced up garlic and one tablespoon of minced thyme leaves. We are just going to dump this right into our bowl and we are going to make a vinaigrette live from scratch here.
Now we have got one teaspoon of a high quality dejon mustard and this gives flavor and also help to emulsify your vinaigrette. So we try to get as much of that off as possible.
Now for the lemon portion, you give this a nice roll. We will take the knife, cut off the edge and I love this little juice extract because it works very well.
So you tuck that down in there and we really only need the juice of half of this lemon. So we will set that aside. We also have two table spoons of champagne vinegar, this is a citrus flavored champagne vinegar, you can get that just about any markets. It is good quality stuff.
Now, we will season it up with some cushier salt, a good amount of black pepper, and these vinaigrettes, they rock. There is really no reason to buy dressing in the store unless you really in a pinch because you can make these things up in seconds. You could also make them in bulk.
Now, two types of oil, pure olive oil because it does not have a lot of flavor. We do not want this to be over powered, so we whisk it in pour a nice of emulsion. We are going to put about a half of cup of this pure olive oil in there. Perfect, and then we will put about two and a half tablespoons of this really nice extra version, and that is just for flavor.
