Episode 35: Zucchini Hash Browns

Hi this is Amy and welcome to Eating Low

Today I’m going to be making Zucchini Hash Browns and its just Zucchini that we’re shredding up and mixing with some egg and were going to fry that kind of in the pan. That’s what make a good breakfast. It can be side dish, really whatever you want to do it and if you’re craving for potatoes its probably a good substitute. So I took just big yellow, this yellow squash and zucchini is the great. I always call the zucchini the green one and then yellow squash as yellow squash but they're always together kind of under the squash area. And I just grated it up by using the grater and then I mixed it with one egg and I probably forgotten—actually two eggs. You probably could have gotten away with using only one egg or maybe an egg and a half. Mine is a little soupy so I’m going to try and not use all that egg.

I also put in a tablespoon of shredded onion that I just grated up too. And you can add seasoning like salt or pepper to give that whatever flavor you want. I kind just wait to add seasoning until I’m done because I don’t like to season up that too much while I’m cooking it. I’ll save that for later. So we’re just going to drop it into the pan and then put some oil that I've been heating up. You can use the pan if you’re using like a nonstick pan. I’m just going to make some a little droplets and if you’re not going to be able to do them all at once, you probably are going to get a couple in here and then you’ll have to make a room it’s probably do a couple batches and I grated up one zucchini depending on how big your squash is. You maybe able to get more or less so just kind of eyeball it.

It’s like one two three four five and there for now and we’re just going to let them fry up on one side and then we’ll flip them over. I’m going to get a plate to put them on when they’re done, spatula, ready and waiting. This is kind of a fun recipe. I may have this for breakfast actually if they turn out good. I’ve got some turkey sausage—some turkey sausage and some zucchini hash browns and it would be really tasty.

We’ll see if these guys are ready to flip yet. They go kind of fast because they’re not really big. We got two that are trying to join together. I’m going to try and keep them a little separated. I like doing these, making little like patty things like this. You can make tuna patties or standard patties by doing this same thing add an egg, make little squishy patties, fry them on each side and it would be really easy, kind of fast food-type meal, but it’s not so bad for you.

This guy was not ready to be flipped yet. Let him cook a little longer. They definitely are getting ready. We’ll try flipping this way. We need a better spatula. They’re almost just like little pancakes. I don’t know if you can see me when I flip, but I’ll show you when I’m done. They look like little pancakes and they’re kind of cute.

I did use olive oil in mine but like I said, you can use the pan spray if you want. You’ll get the same results. I used to use the pan spray for my tuna patty and it came out pretty much the same. These guys are almost ready. I’m just going to cook them on this side and I’m kind of poking them to make sure the centers get cooked. Let me see that.

I’m really excited because I haven’t tried this yet, and I wish I had known about this when I was—I wish I had tried this one when I was actually doing a diet because I think I would’ve liked it. I like my stuff crispy, so sometimes I cook it longer than somebody else might. I have a tickle in my eye. I cook it a little longer than other people would.

I would like to—so it’s ready to go. I’m rolling it out on the plate. I’ll keep my burner on since I’m going to do another batch, but let’s taste these. I’m going to give them a little squeeze of salt. And you could put like—if you like ketchup on your hash browns, you could do that, like a little ketchup.

They’re really good! It actually reminds me of like a savory pancake. Definitely, I would dip them in something or get something to put with them because I’m not really that kind of plain. You could do like a fat-free sour cream. I would watch that a little bit if you’re still on the diet just because it has those calories and more fat and stuff. Well, I guess if it’s fat-free, they don’t.
