How to Make Zabaglione With Berries Part 2/2
Now this is what happens when you’re done with the recipe and your doing it just pinking all what you’re doing but in fact there’s not enough egg yolk in there to give them a whisk so I’m going to try something right now. This is what we do in the kitchen I shut the flame off and leave it for a second. I’m going to add another egg yolk and just a little bit more water to the double boiler so it comes up. Now this may work and it may not work. The egg scramble and again it may not. We’ll know in a second my egg is egg yolk. I have to be whipping it very vigorously at the same time.
So add the yolk turn off the flame and viola the yolk is not scrambled because the mix really wasn’t hot enough but as you see it thickened very nicely this is what I go through all the time. When I’m trying to make a recipe sometimes it works on the first try and you’ll find yourself with this is going to work but it’s only the fourth egg yolk that’s what I did and added it at the beginning. It’s getting nice and creamy. This is enough now just adding that 1 more egg yolk which would be enough for just about 5 to six people this is only what you got to put about a nice maybe 2 tablespoons of zabaglione over the berries and then we’re going to top it with some amaretto cooking crumbs.
You could put shaved chocolate on there, you could put a sugared cigarettes they call oh this is good now very nice. Lower the heat a little I’m going to hold this pan so it doesn’t move a little. We’re going to hold this and take this bowl and immerse it in a pan with ice water with ice cubes you want to cool down the zabaglione and do not serve it as a hot topping but dessert. Just so you can make it ahead of time and do something wrong with that either and you beat.
Just stir it here for another minute, cool down a little bit, not much. Well let’s taste it just one more time because if it’s isn’t sweet enough at this point I could still weigh the little sugar. Wow you know what it came out with a nice flavor I like that so let’s just put this over the berries, berries zabaglione sauce sprinkle with amaretto cookies on top. Now the only problem with this dessert now is I’m forced to eat it. I didn’t want to do this but this taste so good and this enough for that was just 2 spoons which is funny you know and the other 2.
Like I said these are enough for six people. You know the amount of fruit that you place in there that’s up to you. I have about a half a cup a cup worth of strawberries in there. Mix your berries blueberries, raspberries, blackberries, strawberries mix them you can put melon in there also or just serve them with strawberries. This is another recipe of mine that works don’t worry I’m not going to drink this even though I love to enjoy.
Make sure when you’re using these extracts that don’t use imitation always use pure. That is really good. I’m loving it.
