This cool classic sauce makes a nice accompaniment for everything, from meats to vegetables. We prefer thick, Greek style yogurt to make the perfect Tzatziki. Start by peeling, seeding and dicing two cucumbers. Add the cucumber to a strainer over a bowl and sprinkle with a little salt, let them stand for about 30 minutes; this technique will drop the water out of the cucumbers and the Tzatziki sauce will be thick and creamy. Next, in a blender, combine 8 ounces of Greek yogurt, the cucumber, 2 tablespoons of extra virgin olive oil, juice from a lemon, one tablespoon of fresh dill, 3 peeled cloves of garlic and salt and pepper to taste. Process the ingredients until they are well-combined. Cover and refrigerate the sauce for at least one hour. Serve the Tzatziki sauce with our spicy lamb kebabs for a real Greek treat.
