Hi! I’m Jim Davis, a chef instructor at Bryan's kitchen. Welcome, today we’re doing leftovers, Thanksgiving leftovers. Right now we’re going to do, a breakfast Frittata. This is a wonderful meal, I don't know about you, but my favorite meal and my wife’s favorite meal is breakfast. And this is great use of Thanksgiving Leftovers. First, I’m taking six eggs, remember always break an egg on the flat surface, so that you don't push eggshell into yours eggs. We’re just going to stir these up a little bit and season it with a little bit of salt and paper. All right, set those aside for just a minute, I have here a mirpoir, that’s carrots, celery, and onions that I sautéed in a little bit of butter. Then I added our leftover ham and turkey from our Thanksgiving dinner. I’m going to add to that some stuffing and some sweet potatoes, just few and some green beans. I also had a little bit of leftover Swiss cheese, so I’m going to put that in my Frittata as well. Remember a Frittata is just a baked omelet. So what we’re going do now is add our eggs to our base and then put it in the hot oven and bake it until it turns into a nice and beautiful golden brown. Now we’re going to add our eggs. I added just about a quarter of a cup of milk to my egg mixture and that’s ready to go right over top, all right into the oven with our Frittata, a great breakfast meal with Thanksgiving Leftovers.
