Speaker: Okay! so I am going you first how to do, I have two rolling mats here, and I like avocado in mine. Have you guys ever used an avocado before? You have not? You have not? Okay! So, what I am going to do is cut this open and show you how to cut into an avocado. These are really light. Feel that push first on your thumb. Feel how soft that is? That's the way an avocado should feel. So, when you go the grocery store and you are picking out an avocado for your Sushi, you say, that's too hard or just perfect and you should to able to dent it a little bit and it will pretty much turn black on the outside.
And with this, I am just simply cutting all the way around so that I can turn it. See how I am just going to turn it, and there is the pod right inside. This is a seed, that's an avocado's seed.
Child: Big seed
Speaker: Don't do that at home. I am just going to remove the seed. You can do that with a spoon as well, and see how it just pops right in there, and then I can lift up my knife and pop it off. So I don't even have to see it. Come around, and then on the next round, I'll show you how to take it out with a spoon.
So, this is so simple. I am just going to take a spoon, it's okay that it has Wasabi on it, and I am going to scoop out the avocado. Just kind of scoops right out of the shell.
Child: Looks like a turtle shell.
Speaker: A turtle shell! Yeah, you are right. The turtle shell right there. How about you do this one and I'll cut the other two open for you guys to cut open. Now, we just need to slice it. Right along, see that? Popped it open, I am going to set this down and then I'll do the next one with a spoon, so you can see it. I don't want you to try anything fancy.
That's easy, go ahead, it's okay, just gets mushed up in there anyway. So you go ahead and scoop that one out and put on the cutting board. Now, I'll give you another one, you scoop that one out and then we'll cut them up. Keep that for later.
Good job! You can throw away the skin. Good job, Asher. Look at that, you all are doing fantastic, and again, it doesn't have to be perfect. They are just going to be cut up and hidden inside things anyway. Okay, since you are here, Brad, I just want you to cut it up, I just want you to cut it in long strips. It's like butter, it's so soft. See that, just whatever way you want to cut it, nice in pieces. Now, while you are cutting that, I'll show these two how to roll it.
Child: Throw the skins away?
Speaker: Yup, throw the skins away. It's okay. Good job, just move it out of the way. Yeah, you can throw that and sponge it on. We will save one for our Wasabi. Okay! So I've our Sushi rice, and I've our ingredients. We are going to use our Nori Paper, and what is Nori? Seaweed!
Okay! So we have our Nori, and you can look at that and you can see that one side is little bit shinier than the other. So we're going to place that shiny side down, just like that, and we have the Sushi rice that's already seasoned with the rice wine vinegar, the sugar and salt. So it has a little bit of a tang to it. I've some water here with a little bit of rice wine vinegar, just to dip our fingers or else it just fix everywhere. Then we have some pickled ginger, we have the Wasabi if you want some, Asher. Then we'll have a Surimi, this is mock crab. So it's already cooked; you don't need to worry about eating raw fish, if you don't like to. And we have some cucumber, this is an English cucumber, cut into long strips, and then we are just going to stuff it with this item plus little avocado. We've got some ginger and the cilantro right there.
So, I'll show you first, and I'll get my hands a whole wet, all wet, all wet and I am going to grab some of my rice, it's pretty right here. You see it, there's kind lines, kind of intervening lines right on here. You want to first, you want to start your rice at that line. Did you see that? Then I'm going to press it out into a nice flat space about two-thirds of the way, almost all the way, but it should be looking like a nice square or kind of like a rectangle actually and then packed nice and tight so when we roll it, they all stick together. See, how that's done? Nice and flat and solid, it's nice and packed. I am going to rinse my fingers off, then I am going to add what I want.
I am going to start with these; these are English cucumbers, they have less seeds, very pretty, and I cut them into nice long strips. See that? And now I'll extend all the way to the end. No, I don't want that many, I want to make sure I get some of this. This is our mock crab, I like to call it Crab with the K. That's supposed to be a funny joke. No? Okay. I like Wasabi, I am going to put some Wasabi in here, just a little sprits. Now, when you put this in, this is really strong, so you just want to put a little bit in. Even I just want a little bit on there. See that? And that's your choice if you want to put yours in there.
Keep my towel, my wet towel handy, so I can wipe my fingers nice and clean. Okay, so the first thing we are going to do is, we are going to roll it up and this will essentially roll in on each other and we are just going to use the mat, so that it rolls up nice and tight. See, how that's rolling in there.
Child: Yeah.
Speaker: See that's the Nori is covering. Okay, and then I am going to push it down, and kind of just scoop it in a little bit here, just pressing, just a tiny bit, to make it stick, like that. Then I've to lift this cover up just a little bit, so it can continue to roll. So, it's going to be kind of a slight of hand here. I have pressed it down and then I am just simply going to roll it over. When I get down to the end here, I have to make sure that they stick. I am going to clear off any rice that may be sticking out using my wet towel to get rid of that, and then I am going to use this water, this little rice wine vinegar water and paint the edge just like that. See that?
Just enough, and finish. Tight and then we have a Sushi Roll. So now I am going to set mine over here and we'll cut that.
Child: Then do you need to cut it?
Speaker: Yes, we will. I'll let that skip a bit but I let you guys make yours first.
Child: Cool.
Speaker: Okay! And you can put whatever you want, I'm going to clean up my area a little bit.
