Slide on that prism sliders, these guys are not just mini hamburgers anymore, they’ve been sweeping the nation, I’ve seen them on menus as tuna tartar, has smoked salmon, I’ve even seen crab cakes sliders. When it comes to sliders, the most important part is the bun. Now, a lot of bakeries make specific buns for sliders, but if you ask me, I’ll just ran down of the grocery store and take up some dinner rolls or Hawaiian rolls work really well. Even hotdog buns, hamburger buns or hoggie rolls. I’ll take the bun and dress them up myself; the best way to do that is with a little egg wash. Grab a pastry brush, top off your buns just like so. Now egg wash is really easy to make, you just crack an egg with about a teaspoon of water per egg, mix it up and what this does is it creates a nice sheen when they come out of the oven. Not only that, but we’re going to add tears of some of these seeds to the top. So I have black sesame seeds, I have some poppy seeds, some sesame seeds and then you can just mingle them all together in one. Can you give us a little individualized touch? Got the poppies in the oven, 350, that will take about 5 minutes, oh and these are ready to come out within 5 minutes. Now I’m going to sample some smoked salmon sliders. What I do is I will just cut the bun open then I’ll do some hotdog buns, and what I do is I start out with the cream cheese. So when you’re making sliders, you want to have all your ingredients in a row ready to go. Okay, a little bit for you, then I’d like to put a little capers, now this is where it gets fun; when you’re making a slider, all this is up to you, you can get creative, you’re the chef. So if you like capers like I do, extra capers, please? If you don’t, you don’t have to use them. If he needs pickles, red onions, you could put cucumbers in them. Now, here’s the smoked salmon, just kind of drape it along, okay here we go; now, I’m going to put on some sprouts. Now, alfalfa sprouts would be great, radish sprouts, these are dicon sprouts, okay garnish them up, close them up, here we go. Now for the hotdog buns just slice them in three. Now here’s where you can have a lot of fun in the garnishing opt the sliders; now here I have a little chive, maybe on a little burger, I put a little pickle and this one I’m going to make a cucumber ribbon on top, and I have a peeler and a cucumber. What I’m going to do is I’m going to take the peeler and just kind of slide it down just like so, taking off nice pieces, then I’ll take the toothpick, just going to wrap it around. Sliders are fun to display, they’re easy to serve and I like them cause, well they’re just my size.
