Speaker: This is the secret barbecue sauce recipe that we are spilling the beans on. It's slow simmered and can be brushed over anything from hamburgers to chicken. Try it and you will become the ultimate grill master.
First in a five to six quart sauce pot heat one tablespoon of extra virgin olive oil over medium heat until hot. Add two tablespoons of peeled and chopped ginger and one large chopped onion. Cook until the onion is golden and tender, about ten minutes. Now add three tablespoons of chilly powder, then add three minced cloves of garlic and cook stirring for about one minute and one 8 ounce can of crushed pineapple with it's juice.
Cook for about one minute longer. One 28 ounce can of crushed tomatoes with their puree, a third of a cup of ketchup. A quarter cup of cider vinegar, three tablespoons of dark brown sugar, three tablespoons of light molasses, two teaspoons of dry mustard and one teaspoon of salt. Next with a KitchenAid immersion blender puree this sauce until smooth.
Then reduce the heat to medium low and cook, stirring occasionally until the sauce reduces to about five cups, about 25 minutes. If you are not using the sauce right away you can cover it and put it in the refrigerator, it will keep for about one week or up to two months in the freezer.
