Karen: I’m going to start by lining the large sheet pan with parchment paper. Now if you don’t have parchment paper, you simply brush the pan with a little bit of vegetable oil but you do not want to use non-stick cooking spray for the butter will spread will spread too much.
Lisa: You know that’s really important to know.
Karen: Right. Okay! Now what we’re going to do is we’re going to start with some nice sweet chocolate morsels and we’ll add butter. We’ll put this in the microwave for about 40 to 60 seconds.
Lisa: You know what Karen it’s really important that the butter bowl is completely dry. Otherwise the chocolate will seized and become grainy and not usable.
Karen: That’s right.
Lisa: Another important tip is to stir the mixture every 20 seconds or so to prevent the chocolate from overheating. You want to get it just warm enough to be melted and smooth.
Karen: Okay! Now we have our melted chocolate and I’m simply going to add one egg, granulated sugar.
Lisa: You know what Karen it’s important to incorporate the egg and the sugar in the butter while it’s warm.
Karen: Right!
Lisa: That way it incorporates easily.
Karen: And now what I’m going to do is fold in the flour and I’m just going to mix this until the flour is incorporated. We don’t want to over mix of the other like this because otherwise the cookies will become tough and hard.
Lisa: Okay, now what we’re going to do is we’re going to drop our cookies onto our sheet pan.
Karen: Right.
Lisa: Using the small scoop. What we’re going to do is we’re going to spray the scoop with vegetable oil and this is really going to help with the other release nicely.
Karen: Right.
Lisa: And make sure that you top up the butter. Now we’ll bake this in the 375 degree oven.
Karen: So as the cookies baked we’ll go ahead and prepare the garnishes.
Lisa: Well you know at candy canes have such a great flavor and they crush so easily. But if you don’t have candy canes, you could use peppermint candies as well.
Karen: That’s right. What I’m going to do Lisa is take the flat side of the meat tenderizer and I’m simply going to crush this. Okay, so we’ll set those aside and now what we’re going to do is we’re going to melt a quarter of a cup of white chocolate morsels in the micro cooker. All right, so I have my melted chocolate and what I’m going to do is put this in the resealable plastic bag. Here, now we’re ready to garnish our cookies.
What we’re going to do next Lisa is just turnover 10 of these cookies and while I’m doing this—
Lisa: While I have the peppermint patty. You know it’s about to put the peppermint patty when the cookies are still warm.
Karen: Right.
Lisa: That way the peppermint kind of melts a little bit right?
Karen: Okay, so now we’re just going to go ahead and place the tops. Okay!
Lisa: Looking good.
Karen: Great!
Lisa: Now we’re ready for the white chocolate and the peppermint.
Karen: We are. Let’s go ahead and drizzle with our white chocolate and start decorating. They’re so cute.
Lisa: And they’re such a fun special treat for holiday entertaining.
