How to Make Mint Truffle Brownies
Mint Truffle Brownies
5 sticks of butter 10 oz unsweetened chocolate 10 fresh eggs 5 cups sugar 2 teaspoons vanilla extract 2 teaspoons peppermint extract 1 teaspoon salt 2-1/2 cups flour
Okay, we’re going to make the Sweet Addition Truffle bars and there are two different versions that we use this recipe for. It is the mint truffle bar or the mocha truffle bar. Today we’re going to make the mint but I'm going to make you aware of how you make that mocha truffle. It’s just simple additions or taking things out. It’s just a fairly easy bar.
So we’re going to start off with melting our butter. You need 5 sticks of butter. So while the butter is melting, I've got my five cups of sugar I'm just going to add that to my mixer bowl. And I'm going to add one teaspoon of salt, two teaspoons of vanilla and two teaspoons of peppermint extract.
Now for making the mocha truffle bars, I wouldn’t have added the peppermint extract. I would add two teaspoons to a tablespoon of the instant espresso powder—that’s what you're looking for.
So since we’re making mint truffle, I'm going to mix this in a little bit. And now all I have to do is wait for my butter to melt and then once my butter has melted I'm going to add my unsweetened chocolate which is 10 oz. and then I've got 10 eggs measured out and 2-1/2 cups of all purpose flour. Okay, our butter is all melted so I'm going to bring it over here and we’re going to add my 10 oz of unsweetened chocolate to this. So we’re just going to stir this until its melted. You can actually let it sit for a few minutes if you prefer.
The pan is hot so we’re going to use a rag, and just add these two—our sugar mixture here. Turn that on, low speed again. You don’t want any of the hot liquid coming back at you. Once the sugar and the chocolate are mixed, we can add the eggs just one at a time. You want to wait until each addition is mixed in thoroughly before you add the next egg.
Now, we can add our 2-1/2 cups of all purpose flour. So we’re going to mix this until it’s incorporated. A lot of flour hanging around on the sides there so I'm going to scrape that into the bowl, and also I'm mixing it at low speed to ensure that you don’t over mix the product. A couple more spins and you gently lift the bowl. We've got our sheet pan over here. You want to spray this really well. This is kind of a wet brownies so you just want to make sure it’s spread really well, so that when it comes out of the oven it will still be really moist. So let’s give it another round to make sure everything in the bottom and top are evenly mixed.
Okay, so we’re going to put this in an oven at 350 degrees and we’re going to bake it until the toothpick comes out nice and clean just with a few moist crumbs on it. And that’s approximately 35-45 minutes.
We’re going to check our mint choco bars, quite a few moist crumbs left on there so you know it’s done. We’re going to set it on the side here to cool. Meanwhile, we are going to make some mint truffle bar frosting. We need to start with a pound of soft butter, so we’re going to put that in our mixer with the paddle attachments put that on the side. We've got 3 cups of powdered sugar in our butter in here. I'm just going to let this mix and get together and then we’re going to add our wet here. We have two teaspoon of peppermint extracts, two teaspoons of vanilla and I'm going to add some cream of mints here that I'm going to save for later. Scrape the sides really quick. So we’re going to mix this until it gets nice and fluffy.
So while our mint bar frosting is mixing, we are going to make some garnish. And this is just going to be a nice little drizzle on the top. It’s a nice finishing touch to the brownie.
So we’re going to start off with our one cup of cream, we’re going to bring this to a boil to a medium high heat. And I've got one pound of semi-sweet chocolate here. I'm going to pour that in this bowl and wait for our cream to boil. When the part of the cream starts to boil you definitely do not want to walk away. It happens so fast and what will happen is the cream will boil up over the pot and on to the stove. It will make a huge mess. So I'm going to turn this off, bring it over here and we’re going to pour it over our pound of chocolate. I'm just going to mix it until it comes together.
At this point our chocolate is completely melted and we're going to add a couple of teaspoons of vanilla. We’re just going to set this aside because our frosting is ready to add the cream cheese. And we’re going to add a pound of cream cheese, just add the whole block in there and we’ll mix this until it gets smooth. I will do it in the lowest setting. I'm going to add a little bit of crème de mint. I actually have a pinch of green food coloring in here because I like it to be extra green, so I'm going to add that slowly. Our frosting is done mixing.
So for our last step, we’re going to grab our brownies which are nice and cool. Take it off the mixer and scrape off all the goodies and pile it in the middle. I'm going to spread it all over the top and hitting all corners of the brownie. So it’s okay if your brownie has imperfections because it will be all covered with the frosting. Then take that garnish we just made and drizzle it over the top just like that.
