Lizzie: Hello and welcome to the Team Whole Grain Kitchen I’m Lizzie Walters and I’m joined by fellow parent and Olympic Champion Greg Searle, how exciting and we’re going to put in together a pud that you can make literally in 10 minutes flat. How are you in the kitchen?
Greg: Well certainly have been more comfortable sitting on the starts of the race and here we’re on start of the cooking then with this ingredients that are in front of me but today with you here to guide I’m sure we’ll do something good.
Lizzie: Well this is really easy and you can impress your kids when you go home with it.
Greg: Okay.
Lizzie: With this one okay it’s called Mini Lemon cheerios cheesecakes and it’s a really lovely pudding that you can have in the evening especially the nights of getting lighter, if you would grab that bowl of cheerios.
Greg: Yeah.
Lizzie: They’re going to be the crunching base of your cheesecake.
Greg: Okay.
Lizzie: Alright so just spin them in like that.
Greg: Yeah.
Lizzie: Now it might seem a little different using cheerios in a pudding but its’ great because they provide a wonderful crunch to the lemon cheesecake but not only that it means that you’re going to get some fiber, vitamins and minerals you know in the pudding.
Greg: Well I love the idea giving that to my kids because I want to keep them healthy as they can.
Lizzie: Fantastic, alright well you drummed that rather well. Now slightly if you bring the big bowl over right I want you to scrape the Greek yogurt into the bowl using that little spatula. Lemon curd in there.
Greg: Yeah, same spatula?
Lizzie: Same spatula because it’s all going to get mixed together.
Greg: Yeah.
Lizzie: We’re going to add an ingredient lemon zest.
Greg: Yeah.
Lizzie: The job I want you to do. Now off you go.
Greg: Smells nice.
Lizzie: Yeah it smells really, really good. So you really want to get the flavor of the lemon, the zest which is going to give it that flavor then if you can just sort of squink it sort of pick it up and throw it in.
Greg: Okay.
Lizzie: Right. Now I’m just going to move this away because what we’re going to do now is to lightly whip some cream alright so show me how you whip.
Greg: I can do that.
Lizzie: I think so go on. I think you should be very good at this actually. Now what about when children do a little to you know staff what would your advice be?
Greg: Well I guess it’s pretty important to make sure that there’s enough energy something afterwards definitely when I’ve been training I guess as fast as I can I think this is probably a window about 30 minutes to get energy back in. I’ll see to be great stuff to get in and for me it’s pretty easy because I can prepare it.
Lizzie: A little bit more, okay I’m going to carry on whipping that. Can you very slowly mix those ingredients together for me if you leave the bowl on the board on the board that’s it.
Greg: Oh on the board.
Lizzie: Yeah just slowly mix that together.
Greg: Yeah.
Lizzie: Now look you can take hold of that now. Can you see that’s nearly whipped just give it a few more seconds and say that is about probably there. Okay if you just scrape all of that into there.
Greg: Yeah.
Lizzie: Good so probably a good thing to do now would be to use a big spoon and when you fold you want to cut into the mixture like that. Figure 8 and turn the bowl and then cut it in off you go.
Greg: Okay so cut into it and fold it in.
Lizzie: And turn the bowl that’s it good. That’s probably perfect now. I’m just going to taste it to make sure it’s alright.
Greg: Yeah it’s alright.
Lizzie: Pretty good and really, really, really light. Right this is the way you have to be a little bit neat.
Greg: Okay. So does this mean you can do this for me?
Lizzie: No, no you can do this but I’m going to do one and you just want to just very carefully spoon. Now what you want to do when you do this Greg is up just can you see on just laminate going from the center that way you get it really neat. It will look nice, alright, go good. Yes. And this is the other reason why you don’t want the cream to stiff because there’ll be quite of you go.
Greg: Is that enough?
Lizzie: Yeah that’s plenty. You could probably put a bit in there as well so it’s evened out is it.
Greg: That’s it.
Lizzie: So all we got to do now is put it in the fridge for about ½ an hour and then we’re ready to decorate it so off you go.
Greg: Lovely, thank you.
Lizzie: Right now this is when you can get the kids involved with the whole thing but the decoration a bit we’re going to do what do you think smiley face.
Greg: Smiley face is for kids. Yeah, yeah.
Lizzie: So we’ve got some
Greg: Strawberries here which we can just sort of stick.
Lizzie: More cheerios.
Greg: More cheerios a bit more whole grain which is good for them.
Lizzie: Yeah absolutely so you can go along and have a little practice.
Greg: I think.
Lizzie: It’s really nice to keep the fruit whole in that way it stays nice and juicy or keep it quiet so that chunky and big. Well for someone who told me that you were no good in the kitchen you proved us wrong Greg I think even the camera crew are impressed.
Greg: Yeah that’s not bad isn’t it.
Lizzie: So there you have it mini lemon cheerios cheesecake. Well done it’s been a pleasure cooking with you.
