When it comes to desserts, I have a hard time committing to just one and I have a feeling, I am not alone. So when I serve desserts, I really prefer to serve bite size portions of all different kinds of desserts, kind of like a sampler platter, that way everybody gets a sample of everything.
My favorite part about serving bite size desserts is in their presentation. Now I know a lot of you have things in your cupboard that you've never thought about serving dessert in before. Like espresso cups, spoons and different shot glasses.
I am going to cut up a little pound cake, take off the outer side. Now buying store-bought is not cheating, just getting ahead. So cut a little piece here and this is how you miniaturize desserts. Don't think of them as any different, just smaller. I am going to cut off the ends, I am going to cube this up, I can put some in my shot glass, so I am going to build kind of like my own little trifle.
Now you could use chocolate cake, you could use angel fruit cake, you could use brownies, anything that suits your fancy. I have a little lemon cream here, a little bit of whip cream. Okay, so I am going to layer this some berries, top it off little whip cream, mint leaf, beautiful little trifle. Then I am going to put some cookie crumbles down. Now this is a good trick, if you are serving bite size desserts on spoons, because what it does, is it secures the spoon on the plate, so it doesn't slide around.
A miniature cookies are always fun on a sampler platter. Here we go. Get some shortbreads, different variety and VoilĂ ! an individual sampler platter.
One of my favorite ways to serve bite size desserts is on a tier platter. Now a lot of times you don't have a tier platter. So here is the tip on how to make your own. Just get a plate, a larger plate on the bottom, get a glass, place it in the center and then put your desserts around. Here we have the little mini lemon trifles and I have something as simple as a chocolate pudding.
Okay, I just layer these around the bottom. So we have chocolate pudding, we have layered trifles, we have miniature cookies, we have got brownie bags. This is going to make for a great tier platter, then I take a plate, a little bit smaller than the first one, place it on top, another glass. Then I'll may be put some little cookies around. It's so easy but let me tell you, you got to do this at the table because you want to make sure that this is not getting moved around once you've made it.
So I'll put the cookies and then top it off. VoilĂ ! Check it out. So many excuses to have more than one bite.
