How to Make Jasmine Rice with Chicken in a Crock Pot
Okay. Today let us have nice simple no-brainer item cooked in a crock pot. Well, it is going to be chicken and rice with ginger and vegetables. On the board, there are vegetables all cut up, I turn the crock pot on about half an hour ago, put on high then I started dicing everything up so when I put in there it is going to be hot already.
On the board we have one a half pounds of chicken breast meat cook in strips; not too thick and not too thin, five ounces of onions small dices, Jasmine rice we are going to use two cups, green pepper four ounces, garlic one table spoon, celery three ounces, carrots three ounces, three each bay leaves, half a teaspoon of thyme, two teaspoons of sea salt I may adjust later on, and I have a teaspoon of black pepper again, I might adjust that later and quarter cup of minced fresh parsley you add at the end. Ginger one ounce very small diced and four ounces of yellow pair tomatoes cut in half. You do not have 1:16 use regular tomatoes and three cup of olive oil or butter I am going with the olive oil today. Everything is laid down and ready.
First thing I will do is put the oil in, next the vegetables, tomatoes, everything I diced up, it goes the ginger, the celery, the peppers, the carrots, tomatoes and garlic, it is crock pot so it does not cook fast, but the fact that I preheated it, put on high for about almost an hour, you can hear it cooking already. So we will let this cook, I will just put three bay leave and I have a teaspoon of thyme, let us try thyme if you have fresh, use fresh, I am going to cook this for about five minutes.
We will cover it up, this five minutes in there, sweating the vegetables is getting more flavor at room before we put the rice and the stock. We will return at five minutes until eight minutes and also make sure the chicken stock. If you do not want to use stock use water, if you do not want to use, you use vegetable stock. How to make a vegetable stock, boil a good amount of carrots, onion and celery, boil it, have a three cups ready very hot, it will help the cooking time in the pot.
I am going to add the sea salt, we still we an eight minutes, two teaspoons sea salt much better to use that regular salt and the half a tea spoon of black pepper. I like things a little bit spicy or not, all that spicy, okay that is the end on 1ight minutes. We will mix this up, we have the chicken, mixed that up, you have the rice and the chicken stock, given a mix make sure all the chicken separated and we are ready to go. Next time, the next voice you hear will be mine telling you that is it is time and I will let you known the timing.
Let say you forgot something as I did, I forgot the onions, so what I have to do, I have to go and sauté the onions on the stove for a few minutes, you can not put them in there raw, that is why we sautéed up all the vegetables earlier, so there. I just corrected a little error, not a big deal. After a total of one hour and 48 minutes we are done. I will add it to the mix was 1 teaspoon more of salt and a teaspoon of cayenne pepper and now we are ready to serve. I will let you know how many portions we get out of this.
Let say another 20 minutes on low setting on the cooker. And then this recipe will serve three people, the little left over or four people with no leftovers.
