These cranberry Cornish Hens are the perfect size to serve individually to each of your guest. In a heavy two-quart sauce pan, combine a can of jellied cranberry sauce, add a half a cup of dry white wine and a tablespoon of lemon juice. You will want to use canned sauce because of its smooth consistency.
Cook over medium heat, stirring constantly until the cranberry sauce melts and the mixture is smooth. Rinse the hens in cold water and pat dry. Sprinkle the cavities with salt and pepper. Add a few rosemary sprigs. Now, close the cavities and secure with wooden toothpicks. Place the hens breast side up in a lightly grease shallow pan.
Next, brush the hens with the cranberry mixture, coating all sides. Season with salt and pepper, bake it 350 degrees for 45 minutes, basting frequently with the cranberry sauce. Serve the hens drizzled with an extra spoon full of sauce. These little hens will not only taste great but the presentation is adorable.
