How to Make Caribbean Marinated Wahoo
Dan: Okay, we’re in the kitchen here at Silver King Lodge. Yvonne is going to go ahead and introduce us to the chef. And Yvonne, who is she and what are we going to be doing today?
Yvonne: This is Marcella and she’s going to do a Wahoo dish. And she’s going to show you the whole preparation of how she does her Wahoo. And this is the Wahoo—
Dan: And this is the Wahoo that the guys talked about—
Yvonne: Exactly. They’re fresh Wahoo, ocean into the frying pan. So that’s the way she starts. She carves into that fish—
Dan: Just going to cut, quarter it out.
Yvonne: She’s not going to use the dark meat. She tries to get rid of that. She’s butterflying it right now. That’s the way she do it, get it to be a butterfly and that’s—
Dan: What’s this?
Yvonne: A quarter cup of vinegar. If you don’t like vinegar you put a quarter cup of lemon juice.
Dan: So as she mixes all these, she’s using this as a marinade now?
Yvonne: Yes, that’s what she does when she’s marinating the fish. She’s leave that—let that sit for a while there once she gets all her other stuff ready that she’s going to put in the—
Dan: Put in there. So then, this would go in the refrigerator for a little bit?
Yvonne: Yes, she put it there until she is ready to use it.
Dan: Okay, and what’s the next step?
[Foreign Language]
Yvonne: She’s slicing the onion and the bell pepper.
Dan: Next, she puts it on the flame, what’s next?
Yvonne: Okay, she’s putting in a little bit of olive oil, a little bit of olive just to get the onion and bell pepper going.
Dan: Okay, so what’s this now?
Yvonne: Coconut milk.
Dan: Coconut milk, the milk from a coconut.
Yvonne: Yes.
Dan: Okay. And just add that in there.
Yvonne: Yes she added that in there.
[Foreign Language]
Dan: And now we have the fish and this is the Wahoo.
[Foreign Language]
Yvonne: Put a little—
Dan: A little red wine. And how long do we cook this one?
Yvonne: 10 minutes—
Dan: 10 minutes and then after 10 minutes it will be all done?
Yvonne: All done, she put it in a tray or plate and put it out there and—
Dan: And through the magic of television we have one here and then we try it. This is the Wahoo that she made up and it’s delicious.
Yvonne: That tastes so good.
Dan: Delicious. Thank you Yvonne, Gracias! [Foreign Language]
Yvonne: Okay.
Dan: And this is a dish and come down here at Silver King Lodge, she’ll be glad to make it for you, local Wahoo dish. I know you think about coming down here to the Caribbean that’s all going to be tarpons snuck but this Wahoo was cut today down here, a lot of Wahoo, all those kind of fishes they catch and the tuna and just another beautiful dish so we have down here. That’s what’s what it’s all—
