Hi! I am Chef Keith Snow. Welcome to my kitchen. I want to show you how to make your own Caesars dressing and it is easy to make at home and I will submit much better than store bought. Let us get right into it. we will use our blender method to make this. First ingredient Shallots, get those in there then we have a good quality parmesan cheese, garlic. We have some mayonnaise and this is one of the rare instances that I use this stuff but it helps give the dressing good body. We got some high quality [Muffled] mustard and then we have a little bit if Wiltshire sauce, fresh oregano, red wine vinegar , juice about a half of lemon. Three quarters of a cup of pure olive oil, which is very flavor less and that is important and then our secret ingredient is fish sauce.
I am not a lover of anchovies in fact that goes far as she says that “I cannot stand anchovies so what I do is put just a quarter teaspoon of fish sauce. It mimics the flavor of the anchovies then makes this dressing taste pretty good. So now we want to take the whole thing put it up on our little blender here. Give it some black pepper and then a pinch of kosher salt and take it for a ride. Okay our dressing has thickened up and emulsified nice and see it is looking very good. I will give a little taste for seasoning and that is really good, give that one if you want to try, I think you will love it
