Billy Parisi: Welcome back to FixMyRecipe.com, well, we‘ll prepare your recipe that’s slightly broken, I am chef Billy Parisi, and our next recipe fix goes to Cathy Giselle of Sarasota, Florida. She seems to be having an overly tart and flavorless Balsamic vinaigrette, don’t worry Cathy we got your cover here. Cathy, remember when making vinaigrettes, you want to use the ratio of 3 to 1 oil to vinegar. Now when making this balsamic vinaigrette, it’s a simply add all in, mix all in, and you are ready to go. Okay Cathy, simply add our 1/3 cup Balsamic vinegar. And now we are going to add some of our ingredients, shallots, fresh basil, little bit of sugar and some olive oil. Now you can use garlic mayo, you know I love garlic so I am going to throw them lavish so that I can stuff myself, I am sorry.
Two tablespoons of fresh chopped shallots, little bit of garlic, I got to sneak this in here, I am sorry. And now we are going to do some fresh chopped basil, roughly 2 tablespoons, but if you like basil put a little extra and it’s not going to hurt. And for sweetness, a little bit of sugar. Now we are just going to simply whisk in our extra virgin olive oil, taste it out, may be throw in on a little bit of lettuce, let’s see what happens. Don’t forget to add this extra virgin olive oil in it very slowly. If you want, just go ahead and frill it right in a kitchen aid, it works just as great. Don’t forget to add a little salt and pepper to taste.
Alright, after your vinaigrette is nicely emulsified, let’s give it a little taste, a very, very tasty and balanced vinaigrette. It’s going to go excellent on any mixed spring salad or may be even a baby spinach salad. Wait a minute, what do we have here, little bit of baby spinach, Cathy, let’s cook that up; let’s make a quick salad. Okay, Cathy, just a very simple baby spinach salad, add a little bit of roasted peppers, some strawberries and a little bit of Feta cheese. I can’t wait any longer; I’ve got to try this. You got to get a little bit of everything on here.
Cathy, remember when making vinaigrettes, do 3 to 1 oil to vinegar, don’t be afraid to fuse those fresh herbs in that vinaigrette and definitely don’t be afraid to season with salt and pepper, all those flavors together is going to make an amazing balsamic vinaigrette.
