We’re going start back with our sauce and we’re going to start with this half a cup of white wine, cooking wine is fine. Well, just bring it to a pan on medium high heat. Now we are reduce this wine by half and we’re going to turn it up to high heat. Now lets cooking we’re going to rap our scallops and bacon and its just the bacon has a little bit of smoothness and saltiness too; We are not going to add salt, we’re going to add little bit of fresh ground black pepper, mint just roll along.
We can go into the oven 350 degrees for about 5-10 minutes. Now wine is beginning to reduce and to this we just going to add some nice squeeze of fresh lime. And this we will add about, I would one to two ounces of heavy cream. Now we reduce this mixture it almost dry. And just bring this over off the heat. We’re going to add our butter to the mixture. Now here we have about see four ounces of unsalted butter, say unsalted because once we finish and cooperating the butter into the mixture will seasoning salt and pepper taste. We have a nice little serving dish. We can see the bacon once it cooked just wrapped around the skillet to nice firmly so when we going anyway in their almost no need to stir this. We have nice serving bacon and we just pouring the sauce. There we have it. Bacon Wrapped Scallops in a barbecue sauce.
