How to Make a Yellowtail and Pineapple Dish
This week in The Galley I want to do a delicious recipe for you. It’s using pineapple. It’s actually like a pineapple yellowtail dish. So what I'm going to do is take a piece of yellowtail, we’re catching right here at the island today and what I want to do is just go ahead and put it in a little bowl and you can marinate this for a few hours or so. An hour is just enough time. This is a tropical dipping sauce marinate that I have. Let’s put some of it on there, just drop the fish right on there.
We’re going to start off with a little bowl. We have some cut pineapple here. I’m just going to add a bunch of ingredients to this so I have some red onions. Let’s pick some in there. I have some bell peppers, some jalapenos, diced jalapenos and some tomatoes. I’m just going to mix this all up and to give this more of a bite, we’re going to add some of this Thai style chili. This is a chili sauce by Curcumin. It has a nice little bite to it and you would think the jalapenos would be hot enough but not for me. I want a little bit more bite to it so we’re going to add this to it.
Part of a spoonful, just going to mix this all in. That just looks so good. You see all the marks on there. And what we’re going to do now is just all these ingredients that we added together, the onions, bell peppers, the jalapenos, pineapple, just kind of put this right on top of it.
That looks so good and what we can also do is take a little bit more of the tropical dipping sauce and just kind of drizzle on the outside and that’s it, very simple dish to do.
Yellowtail is just one of this fish that are very versatile. The pineapple, the citrus, all that really goes good with it and just got me a little piece, put it in the sauce. That is so good. Just having that spoonful of the Thai style chili sauce, the Kikkoman really added to this dish. It just gives it that extra little bite, just take it over to top and it tastes really good.
