Everyday Italian Giada De Laurentiis: Italians often eat fruit at the end of the meal and they love to use cheese in there desserts. Put both of those together and you have my grilled peaches with Mascarpone. Juicy peaches are grilled just for a moment before being filled with creamy sweetened Mascarpone cheese. Brandy and white wine at extra flourish, you have to taste it to believe it. Now today I’m going to grilled up some peaches and all we’re going to do is cut them in half and see the pith come out this way there we go and then again in half so in quarters. And then, we are going to lightly grill them and when you grill them on a hot griddle, what happen is that sugars in the peaches caramelize and you get a wonderful flavor that comes out of them. I’m going to lightly drizzled some olive oil and it just light; and olive oil is very freeze what’s perfect for this dish. Okay, I’m just going to brush it just so the peaches don’t stick. Here we go, and if you’ve never grilled fruit you got to give a try. It’s refreshing, it’s light, it’s claims your palate, it’s perfect. Now, while those grill I’m going to make a little syrup. Two tablespoons of sugar and two tablespoons of brandy, it’s so good, it’s sweet and it’s perfect for these peaches. Alright, and then some lemon juice, just half a lemon put it all in there just mix it up a little quick and we’re going to pour it over a peaches. Wow! They look good, now I’m not cooking the peaches I’m just warming in through. I’m going to let my peaches marinate for about 15 minutes and then I’m going to top with white wine and sweet Mascarpone of cheese. It is going to be a huge hit, I’m just going to put a couple of pieces in each glass and I marinate them with brandy, sugar and lemon juice and grill them. And look at these beautiful grill marks, two pieces per person, some white wine and some creamy Mascarpone of cheese. Wow! Okay, for some white wine—get that, yum! This is going to be the perfect ending, it’s light dry white wine perfect with the sweetness of the peaches and of course the creaminess of the Mascarpone of cheese. Okay, and now a dollop of Mascarpone of cheese which I whipped with some vanilla extract. Give it a little extra sweetness and my parents used to top it with whip cream but I love the Mascarpone of cheese. And it is very traditional in Italy to do fruit with cheese. Here we go, a little bit for everyone perfect. Last one; it’s time to dig in. Some Mascarpone of cheese, usually you will see it in tiramisu. Speaker 2: Better than whipped cream. It is so creamy you put the white wine and grilled peaches. Good food and friendship are what al fresco dining is all about.
