Aside from a great hamburger a grilled chicken sandwich is one of my favorite recipes for out door grilling.
Hi, I'm Chef Jason Hill and today I'm going to share with you my favorite grilled chicken sandwich recipe, just dress up with avocado, pepper jack cheese, South West sauce that served on a cheesy toasted onion roll. To begin, I start by placing two boneless and skinless chicken breasts in a Ziploc bag and I'm going to pound out. The reason I pound out the chicken breast is to even them out to ensure even cooking and it also cooks a little bit faster on the grill.
This is what you want it to look like. They're going to cook really fast on the grill but when we’re done you cut them in half. Like I said you can make two to four sandwiches. Now I'm going to go ahead and marinate the chicken and then I want to marinate this for at least an hour in the refrigerator or overnight. I had the chicken marinating for about an hour and since there is no salt in the marinade we’re going to go ahead and put a little salt on them. Next, before I put them on the grill, I put a little olive oil on the towel and I wipe down my grill, it helps from keeping things sticking and the grill is preheat on high and your lady skin side down. We add a little more salt to them on the other side and you can see my tongs touch the raw chicken so I got my tongs in there, close the lid and that will burn off and kill the bacteria that might be on my tongs.
Okay, I've had them on this side for three minutes and they're ready to be turned. Okay, now I'm going to add the Monterey pepper jack cheese and we’re going to melt that on there. Alright, before the cheese is completely melted it’s time to toast our pre-buttered cheesy onion rolls, pick a good bread for this sandwich. Don’t just use a regular hamburger bun. Get something a little more upper scale. It makes big difference. Okay, the buns are grilled, the cheese has melted. Dinner is ready. Let's go plate out.
Okay, let's assemble this awesome chicken sandwich. For the spread I'm using a South West sauce and I have a video on this recipe. Alright, we add a little bit of the sauce here of our chicken, fresh sliced tomatoes, we've got our sliced avocadoes. If you want to make a great grill chicken sandwich this recipe is hard to beat.
