This week in the gallery, I had something little bit different for you. We’re going to take a fish that people normally don’t think about cooking, Bonito and do a dish that people don’t think about doing a fish. We’re going to make a Quesadilla. So we’re going to make a Bonito Quesadilla. The way we’re starting out with, I got some Bonita here. I’ll chop up. I’m just using the white meat from the Bonita and it’s marinating. I have in here for about an hour and my dipping sauce and marinate. This is a sweet and spicy.
And what we’re going to start off doing is to take some olive oil and just cook to the pan and I’m going to drop the fish in there. And we don’t care if we get just little pieces because we’re going to just throw inside afterwards. So just to mix it up here and this will cook for a little while. It shouldn’t take too long.
Okay now, like I always cooking fish, I love to add some lemon and lime so I’m going to get some lemon, fresh lemon. You can buy that lemon bottles in a juice, in a little containers but there’s nothing like using fresh lemon and lime, especially here in California, we have access to all the fresh stuff we want. So I’m just going to mix this around a little bit more. And you see, it’s breaking up a little bit and that’s fine because we’re doing Quesadillas. We’re starting out with small pieces and we’re going to end up with even smaller pieces, so we put this inside the Quesadilla.
Okay, well, this take about couple more minutes to cook. And once it’s all done, I’m going to bring in the rest of ingredients. Yeah, that fish is already now, so what we’re going to do is we’re going to transfer this over to a bowl. You can put it on a plate if you wish whatever. So I’m going to bring it all over here. And now, we’re going to start building our Quesadilla. Got all the fish out there. I’m just going to wipe this down, get it nice and clean.
Now, what we’re going to do is try to build in the Quesadilla. So we’re going to start whole grain tortillas. I’m going to put the tortilla right here on the grill, nice and warm. And what I’m going to do is first off to start off with some cheese, add some cheese and put it on there. And I’m going to go ahead and add some bell peppers, some jalapeños and now, I’m going to add some tomatoes. We’ve got really colorful looking dish here. Then we’re going to take our fish and drills right on top of there.
The fish is already cooked. Again, so fish, you would normally think of cooking up and you wouldn’t think about making a Quesadilla but it works out really good. I’m going to out our tortillas and let that all cook. While that’s cooking, I’ll make up a second one. Let’s add more jack cheese.
Alright, our Quesadillas, they’re all done. So what I’m going to do is just move them over to a plate. And then at this point, all you’re going to do is just cut them up. When you serve them, just serve them in little piece like this. You can cut them in quarters, however you want to cut them, just like that. Looks like really good. A Bonita Quesadilla, something I never thought I would try, great little dish.
I’ll number that. Start off the fish. What we need was we marinated the fish and the sweet and spicy sauce and finding a local store on our website, workout really good. Don’t be afraid to fish if you haven’t tried before. If you hear bad, wraps up, fish like Bonita, they’re really good eating fish. You just need to know how to prepare them.
