Hey guys, welcome back to Dede's Mediterranean Kitchen. Today we're gonna to be making a wonderful, wonderful beet salad. I love beets. They are so healthy. They have vitamin A, vitamin C, Iron, Calcium, Potassium, fiber. They are good for blood pressure. They are great in rejuvenating your blood. I mean it's an amazing vegetable. We're going to put this out together really quick and easy. You can get this recipe on my website at DedeMad.com. Don't forget to go there and check out all the other great recipes that I have for you. Let's go over the ingredients and I will also put it together.
We have some roasted red beets that I've just roasted them in the oven for about 40 minutes. I have some endive which is a wonderful lettuce, sort of vegetable. It has a great crispiness and a great flavor. I have some red onion. I have some black chamomile olives, some chips fresh mint, some fetta cheese, and some radishes. I have some whole grain mustard, salt, pepper, lemon juice, red wine vinegar and olive oil. And it's going to be easily put together.
Now, I like to use red onions because there not as strong as yellow onion. You can also use white onions or shallots which have a little bit sweeter flavor. I sliced them up really thin and put them in a nice large bowl. We're going to thinly slice this endive. You could find this in most of your grocery stores. It has a -- it could have a bitter flavor but when you mix it with a nice vinaigrette, it really evens up the flavor. And that's also go great with goat cheese. You can also use goat cheese from this dish if you do not want to use fetta. Just like that. Just nice sliced. It’s a great colorful dish, goes great with barbeque, with chicken. We're going to add our radishes. I also sliced these very thin. Put those in there.
Next, we are going to -- you know what, I'm gonna cut up my chives first. These you can also find in your grocery store. They are lighter flavor of green onion. So just fairly thinly slice these up.
Now, when you're making beets, you're working with beets, don't wear anything white and don't wear anything you really like because these can sometimes make a mess because of the red color and you know the red dye that they have, they could ruin a couple of shirts. So just like that. Just a couple of tablespoons and I just want to have a little bit of fresh mint, not too much. You don't want to overpower all the other flavors. Just a couple of leaves, I love fresh mint though it's so refreshing. It's such an --. You couldn't easily grow it at home. We have a little mini herb garden, it's so easy.
So we're just gonna finally chop this off this well. Just like that. You want to throw that in and then our beets. Now, I roasted this. If you want you could also peel them just about the outer layer. It's a great thin layer. I just like to peel it just a little bit so they look prettier. And then we're going to cut these into cubes.
Now you see. Look at the red. I'm going to definitely have red fingers when I'm done with this. You can wear your gloves when you do this that's why I've seen lot of people wear gloves. That way they don't dye their hands. That I don't really care, it's okay. Thus, you can use lemon juice as well, helps you remove the dye color from your hands. Just like that.
Beets, you can find them a lot of your grocery stores. Don't use canned beets. I know some people just, you know, they wanted the easy route and they used the canned beets. Don't do that. They are just not the same flavor as if you buy fresh beets. Just roast them. Just roast them at a little pan or tin foil. It's so easy. And do this one. These smell so good. They have such a earthy flavor too. They go great with a lot of salads.
My friends love the salad. They are always asking me to make them the beet salad. So we're going to just cut this up and see look how pretty that color is. It's right that good that I have a little white panning board but it's okay. Just cut it into cubes. Just like that. See. Look at that, smells so good. And then just put in the salad. I'm just going to cut the rest of this.
You want to lightly toss the salad when you add the vinaigrette to it. I clean up my board. I wash my hands. There's my beets, see what a pretty color, so pretty.
We're going to get our mustard. We're gonna make the little bit of a vinegar right here. We're going to add just a splash of some red wine vinegar. We're going to add fresh lemon juice. Pick up the seeds. I've got some seeds in there. Stick them up. Take out the seeds.
Now, beets are also used, they used to be used for dyeing. I know, they're also used for dyeing pickled turnips, the kabees. That's how the kabees get there nice red color is because they use the beets to dye them. People would ask me on how could the kabees get that nice vibrant color and to because of the beets. So we mix and the lemon juice, the mustard. We are going to add about a teaspoon of salt. We're going to add some extra virgin olive oil. Make sure to use extra virgin olive oil because they taste a lot better than if you use a light olive oil especially for salads. We're going to add some fresh black pepper, and I could save the olives and the fetta for the last thing because I took them on top of the salad.
So just like that, then I spring vinaigrette, and sort a pour it over the top and you wanna give them a light toss. Just to combine them all. That's going to look pinkish which is fine. Look at that.
You want to serve this right away as soon as you mix it then you wanna serve it. You don't want to mix to far a head of time because then your endive will wilt because it is a form of lettuce. So just like that, it's nicely mixed. I'm going to add the olives on top and if you don't like cal mile olives you can add any kind of olives you like, and then our fetta cheese. You can also use goat cheese, I love goat cheese, it goes great with beets salad too. So just like that, and there you go. All done, you have your beautiful beet salad. Look at that, it's amazing. You are going to love it, your friends are gonna love it. It's a healthy dish, it's low fat has a lot of vitamins and nutrients.
