Male: This week at the gallery, we’re down at the beautiful Hotel Coral and Marina resort and beautiful Ensenada Mexico and sitting next to me is Claudia, Claudia, thank you for having us here.
Claudia: Hi, thank you.
Male: And today, we’re going to be doing a cookie segment down here at this beautiful resort and who are our chefs today?
Claudia: Today, we have Rafael Lopez, and his head chef and Ernesto Moreno, he’s also cooking for us.
Male: Okay, cool and what is it that they’re going to be cooking for us today.
Claudia: Some delicious, fresh scallops.
Male: Scallops, all right cool.
Male: Yeah. This hotel resort is located just North of the Tijuana-Ensenada very close. And you have a huge of Marina. People actually live in their boats year round too right?
Claudia: Yes, they live pier and even some of our guest stays for a few months to live here. They love it.
Male: Yeah, and what’s needed, they have pool facilities here. They have electricity for the boats, they have fuel dock, Feto runs the dock down there. Feto does a great job and the dish that we’re doing here, this scallop, this is something that somebody can come here and order at the restaurant?
Claudia: Yes, they just can have a great dinner for this scallop.
Male: He’s going to warm up the butter.
Male: There’s a wine in there.
Male: A little bit of wine and I’ve never seen a butter that comes with chili in it so that’s kind of need, I'm looking forward to trying that. And what are you going to cook over here now.
Male: I went go on like this.
Male: One minute is enough.
Male: Okay, rino blanco? So all the ingredients were all cooked. So now, we’re just go ahead and plate it all.
Male: Yes, right.
Male: The white rice to make like a little bed of white rice.
Male: Okay and all the ingredients that you're using today are all local ingredients from that area?
Male: Yes, everything.
Male: I never tried frying my carrots with olive oil, it's probably good.
Claudia: And the taste that is given with the wine.
Male: Yeah and the butter?
Male: The garlic and the butter?
Male: You add a little wine. Very easy to do.
Male: You don’t want to taste this one. I actually have this several times at the restaurant before huh?
Claudia: Yes, it's my favorite.
Male: This is your favorite dish here.
Male: And just local scallops with the butter and garlic. All right, jump in here common Claudia and get some of this chilies. That is so good.
Male: That is so good. That is such a great dish, thank you Rafael.
Male: This is a great dish. Great beautiful dish, you can get it right here at Hotel Coral and Marina Resort, come on in, you can order here at the restaurant. It's delicious. If you’ve never been down Ensanada I really recommend you come on down here. It’s a great place to spend a weekend with the family, a whole week just to see the whole region there are lots of great things to do.
