Speaker: Are frozen or canned fruits and vegetables healthy?
Jeannette Bessinger: Frozen fruits and vegetables are probably healthier than canned, because typically there are flash frozen surely after they are harvested. Since a fairly fresh farm of the food, when a food is frozen the water inside of it is crystalize and turns into ice and so it keeps -- it maintains it's freshness a lot longer. You also need to do fewer things to that food to preserve it in the freezer. Canned fruits and vegetables it need a little more processing.
Sometimes they have to be process at high heat, sometimes chemicals are used and often times additives are put in there to preserve it or extra salt sometimes extra sugar which isn't strictly necessary, but it's important to keep the bacteria out of the canned foods.
So it's better than eating no vegetables at all but fresh is best, frozen is second, can is at third.
