Rhiannon Ally: If you’re looking for an exotic dish to liven up your dinner table we have just the one for your easy to make at home we have award winning Chef Mavro here all the way from Oahu. Chef Mavro: Exactly. Thank you.
Rhiannon Ally: Now it’s a marinated fish dish.
Chef Mavro: It is a marinated fish and what I use is I use an Nairagi which is finally quite unusual — I use Hawaiian chili finger this is very, very spicy. You have to make sure you have to wash your hands because it‘s very, very strong so I blended too much. I’m going to put very easy here. I’m going to put some Hawaiian salt and the Ogo so Ogo I’m going cut the Ogo lead a bit.
Rhiannon Ally: You want to cut that up, chop that up.
Chef Mavro: Yeah, this is one of the best ingredient I found here when I came to Hawaii.
Rhiannon Ally: That’s one of your favorites.
Chef Mavro: Oh yeah.
Rhiannon Ally: So it’s an a lot of your dishes in the restaurant Chef Mavro?
Chef Mavro: Yes very specific, you can try it; you want to try this one.
Rhiannon Ally: Sure I love it. It’s really good, it taste kind of salty a little bit.
Chef Mavro: Of course it comes from the sea.
Rhiannon Ally: Yeah, sea salt.
Chef Mavro: And this is Maui onion of course.
Rhiannon Ally: So use a little bit of that.
Chef Mavro: Yeah.
Rhiannon Ally: Okay.
Chef Mavro: And basically this is where we start.
Rhiannon Ally: And then your special ingredient.
Chef Mavro: And my special ingredient Extra Virgin Olive Oil. This is the only one.
Rhiannon Ally: You see how delicate you are with that. This is so easy I think can.
Chef Mavro: You can see our green you can almost imagine the olive inside and now you just have to mix it with everything.
