Fresh Fruit Pizza Dessert Recipe
Hi I’m Betty. Welcome to Betty’s Kitchen. Today we’re making fruit pizza and I’m going to start with the crust and it’s going to be a regular pizza crust. It’s going to be a big cookie and the way I’m going to make the big cookie and sit it next to me and rolling it up and trying to transfer it over there. I’m just taking a roll of cookie dough that you can buy in the refrigerated section.
What I’m going to do is slice down through here and get slices of cookie dough and place them along around the edge and then moving in toward the center until I have it mostly covered then I’ll take my fingers to press it so it’s all even and then I’ll bake it in the oven so let me just get started here and we’ll see how this goes. The end pieces are a little bit hard and I’m just going to put that to the side.
This will work better if you had your cookie dough chilled so you’re just going to take individual pieces, they don’t have to be perfect and since this one is pretty thick and I think I’ll probably make most of them pretty thick I’ll place them not touching one another necessarily because I think I can just squeeze them to be able to cover the bottom. So just get a layer going and we’ll worry about spacing that out.
So this is probably the easiest way for you to get a nice flat big cookie but you’ll see that as I press I can make sure that it is pretty even and I do want even. I don’t want a burn spot here and then a spot is not done over here and when you get it to your satisfaction then you’re going to be putting it in the oven.
Now I have some cookie dough leftover. I couldn’t come over to the edge but I think this is going to rise a little bit. I like to make the edge look fairly neat so I go around with my hand like this and kind of push it in so that it has a fairly even border all the way around but it looks like I have this leftover and I know I have someone in my family who likes raw cookie dough and you may have somebody as well.
My husband won’t be eating that probably before the morning is over so this goes in at 400 degree oven and will bake for maybe 10 to 14 minutes and I’ll keep them out on a time and I’ll be back when the cookie is done.
My big cookie is done and I want to get it out of the oven and you can see that space that I left around the edge cup filled in and it turned out to even out on it’s own. You want to take it out of the oven when it’s nice and browned like this but not burned. You don’t want to leave it long enough for it. If it has any black spaces on the top so this took about 11 minutes.
This has cooled, it’s very crucial that this be at room temperature or even cooler before we put the topping on so I’m going to go away and let this cool down and we’ll come back making nice topping and finish this off.
My big chocolate chip cookie has cooled and we’re ready to make our topping. This is our pizza topping for a fruit pizza and what I have decided to use is actually one of my favorite icings and that is cream cheese frosting. It needs 1 stick of butter or margarine. This is butter and it needs 1/8 ounce container of cream cheese and you could see I’ve used fat free it doesn’t have to be fat free and what I want to do is to blend those together. They are already at room temperature so they should mash with a fork pretty easily and then if I want to blend further I can use my electric mixer.
The next ingredient that I have is 1 teaspoon of pure vanilla extract so here we have our vanilla and I’ve measured out 1 teaspoonful so this goes in over there and then we have one more item to put in. This is an easy recipe to remember because it’s just like one for every thing 1 stick of butter, one 8 ounce package of cream cheese and then 1 teaspoon of vanilla extract and 1 box which is a 1 pound box of confection sugar or you might call it powdered sugar.
So what I want to do is to put this in a little at a time because I want to beat this with electric mixer and also you had starts out and then I’m probably going to have to go away for a while to get it done but I don’t think you would have a hard time imagining how this is going to play out in terms of getting it beat but you start with a little at a time just keep adding more until the whole box is in here so I’m going to start on this and when I come back I will have all of the topping finished.
And that’s how easy it is. It took about a total of 1 minute to get all of that blended together so I’m just going to put some of this out in the center. We’re going to make that nice circle just echoing the big cookie and you can let a little bit of that crust show just like you would probably see on the pizza anyway and then we’ll go for our fruits.
I’ll show you what I’ve chosen and I’ll start pacing these around. I have chose strawberries, fresh pineapple which you can buy peeled and cored like that at your grocery store and then you have to chop them like this and if there are any parts that are bad like some of the skin or something you can take that out. I’ve got kiwi fruit here and I’ve got grapes. Now I would normally use blueberries but this time of the year here in Kentucky they are very expensive and these are about 1/3 of the price so I think grapes are pretty good anyway these are seedless red grapes.
So I’m going to choose the largest one of these to go around the circumference so we just start placing our strawberries and try to make it look pretty and they’re not all going to be the same size, don’t worry about that and you can see the direction this is going in so I’m just going to stop right there. The next layer that I have would be probably the next largest in the length going toward the center and I did that one before I intended to.
So just place these in an attractive way as the next layer end that was not too pretty. I’ll make you see how that looks. I’ll put another one here and then the next layer and I’m going to use the kiwi fruit. You can use it lengthwise or crosswise but I want to save a little that is placed my grapes or blueberries if you prefer so we would be at the center probably here when we’re putting these in.
So I’m going to need some time to get this filled in so I’m going to try to make this a pretty fruit pizza then I’ll come back and show you the result and try to get this last of it so I have arranged the fruit along the top of the cream cheese frosting and you can see the design I come up with. So it makes a pretty dish and it’s really nice to take to a pot lock or something like that so this is Betty’s fruit pizza.
Now I want to emphasize that I chose fruits that were fresh and they were not canned. You can use canned fruit that’s fine but make sure you drain all of the water out of it. You don’t want it dripping down and making this saggy, we want this nice and crispy. Also this is great to do with kids if you have kids that you like to do some baking with the will love pressing that dough into the pizza pan or to the cookie sheet or whatever and making that circle they will love placing the fruit on it and they will love eating it and maybe you’ll get them to eat some fruit.
Now let’s try serving it. I got a pizza covered here and I don’t know how well this is going to go because this is very crispy crust and we got some great chunky pieces of fruit there but I would just go in and go all the way across and then I’m just going to try to get one piece out so let’s try going here hopefully cutting them to the bottom and it’s going to mess it up a little bit.
If you have to serve this by just spooning it out that’s okay, you’ve already made your impression by the original look so I’m going to slide this under. I don’t even have a pie server with me right now and you could cut that a little bit more. You can hear it crunch. Let’s see if we can get that out.
It’s not going to want to come completely but it’s pretty nearly there. You can kind of scoop the rest of that on to the end and to show that there’s a little bit more that comes with it and then when you go to eat it if you’re brave well wouldn’t with this set up you could pick it up and eat it like pizza but I have a fork here which is what I would probably do just come down here and take a bite, flavors blend really well. It’s a great pizza.
